Pork Chop Bake with Yellow Rice - easy and healthy casserole for a weeknight

I’ve found a new favorite casserole recipe: Pork Chop Bake with Yellow Rice. Oh yeah! In the first place, I always have a bag of Vigo Yellow Rice in my pantry. I frequently will make it for dinner as it only takes 25 minutes to cook up on the stove. In addition my family loves the color which is from actual saffron.  Do you know how expensive saffron is? Holy cow it is pricey. That is hardly surprising considering it takes 75,000 flowers to make just one pound of saffron. Furthermore, Vigo has used saffron imported from the same supplier in Spain for over 35 years. Now that is quality control.

My family loves pork chops and this one dish recipe is perfect.

Vigo uses 18 million pounds of domestic rice a year. I cannot even imagine how large 18 million pounds of rice would be, blows my mind. However, the real reason I love yellow rice is the spice blend and the fact they make their own. Each spoonful of rice is a flavor explosion without an explosion of fat on my hips. Ha ha, this is actually a naturally fat free product. One night, I made delicious BBQ chicken patties with leftover yellow rice and leftover shredded BBQ chicken. Wowzer was that ever good. Just shows how versatile yellow rice is. In this recipe the yellow rice pairs nicely with my pork chop bake.

With every bite of Pork Chop Bake with Yellow Rice, I was transported back to our vacation in Spain this past year. Before life decided to throw us some huge curve balls and stress galore. Oh what a simpler time it was. Someday I hope to travel to Sicily where the founder of Vigo, Antonino Alessi, was from. He and his family immigrated to the USA after WWII. Low Calorie, Healthy Dinner Recipe

Saffron Yellow Rice and Pork Chop Bake

Prep Time 5 minutes
Cook Time 40 minutes
Total Time 45 minutes
Servings 6 people

Ingredients

  • 10 oz Vigo Saffron Yellow Rice
  • 2 1/2 cups boiling water
  • 14 oz artichoke hearts drained and chopped
  • 10 oz chopped frozen broccoli
  • 10 olives sliced
  • 6 center cut pork chops About 2 lbs.
  • ½ tsp kosher salt
  • 1 tsp smoky Spanish paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1/8 tsp fresh ground black pepper

Instructions

  1. Preheat oven to 400•. Spray a 13 x 9 baking dish with non-stick cooking spray.
  2. Stir in first five ingredients.
  3. Cover with plastic wrap then foil.
  4. Bake for 20 minutes.
  5. Place pork chops on a cutting board.
  6. Mix together salt through black pepper.
  7. Sprinkle both sides of pork with spices.
  8. Lay on top of rice mixture. (Add more hot water if needed)

  9. Uncover and bake for an additional 20 minutes, or until pork chops and rice are done.

    I love the Vigo Saffron Yellow Rice. The flavor is excellent and it's so versatile for using in various recipes. I have used it for stuffed peppers, stuffed zucchini, burritos, jazzed it up for Spanish rice.. i other words, it's my favorite item in the kitchen when I'm creating different dishes. I no longer use plain white rice.. it's just flavorless compared to Vigo's Saffron Yellow Rice. <3

    I just love the Yellow Saffron Rice. I have been eating it for years and years. I don't know of any other product that contains Saffron that is as reasonably priced. I usually just eat it plain as a side. It goes with so many things. I always have a few bags on hand.

        Hi Robin, Yes, this is an old restaurant trick to keep the steam in. Cover the plastic wrap tightly and completely with foil.

    I've never tried Vigo products, but now I will have to seek them out thanks to your post!
  22. Just. Note in recipe the plastic wrap covered by foil does NOT work in home oven @400degrees. Had to throw out after plastic melted. Luckily had not ruined the pork chops!
