Ingredients

  • 1 1/2 lbs. red potatoes cut into 1 1/2 inch chunks
  • 1 garlic clove smashed
  • 1 tsp. kosher salt divided
  • 1/2 cup non-fat milk
  • 6 tbsp. reduced fat sour cream
  • 1/4 cup finely chopped green onion
  • 1/4 tsp. fresh ground black pepper

Instructions

  1. Place potatoes, garlic and 1/2 tsp. salt in a pot and cover with cold water.
  2. Bring to a boil. Boil until potatoes are fork tender, about 10 minutes.
  3. Drain and place back in the pot.
  4. Add milk and mash potatoes with a potato masher until most of the lumps are gone.
  5. Stir in milk, sour cream, green onion, salt and pepper.
