Ingredients

  • 1 tsp . oil
  • 8 oz . mild or spicy chicken sausage
  • 1 lb . ground chicken
  • 2 cups chopped onions
  • 2 cups chopped bell peppers
  • 8 oz . chopped mushrooms
  • 8 garlic cloves , minced
  • 1 jalapeno , seeds removed and chopped
  • 1 tbsp . ground cumin
  • 1 tsp . ground oregano
  • ½ tsp . ground black pepper
  • 1 tsp . kosher salt
  • 1 cup low-sodium chicken broth
  • 2 (15 oz.) cans northern beans, rinsed and drained, divided
  • 4 oz . Greek yogurt cream cheese
  • ¼ cup chopped fresh cilantro
  • 1 jalapeno , sliced

Instructions

  1. Heat oil in a large non-stick skillet over medium heat.
  2. Brown sausage and chicken. Add to slow cooker.
  3. Add onions, pepper, mushrooms, jalapeno and garlic to skillet. Stir fry for 5 minutes.
  4. Add spices and cook for 1 minute.
  5. In a blender, puree chicken broth with ½ cup beans. Place remaining beans into slow cooker.
  6. Add chicken broth mixture to skillet, scraping off any browned bites.
  7. Pour into slow cooker.
  8. Cook on low for 4 hours.
  9. Add cream cheese and cook for another 30 minutes.
  10. Serve with sliced jalapeno and cilantro.
