Low Carb Bacon Salad Cups

  • 8 slices NatureRaised Farms® Bacon
  • 3/4 cup shredded iceberg lettuce
  • 9 grape tomatoes quartered
  • 1 tbsp . light Greek salad dressing
  • 3 oz . Greek yogurt cream cheese softened


  1. Preheat oven to 350•. Place a mini muffin tin upside down onto a baking sheet.
  2. Spray mini muffin tin with non-stick cooking spray.
  3. Cut each slice of bacon into 3 equal pieces.
  4. Criss cross two slices over the top of one muffin cup. Repeat with remaining bacon.
  5. Bake for about 1 hour, or until crispy.
  6. Let cool.
  7. In a small food processor, pulse together lettuce, tomatoes, salad dressing and cream cheese.
  8. Place a rounded teaspoon of filling into each bacon cup.
