Cinnamon Chip Cookies

  • 1 1/2 cups All purpose 180 grams, unbleached flour
  • 3/4 cup whole wheat pastry flour 90 grams
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 3/4 cup sugar
  • 6 tbsp . Domino Light Stevia/Sugar Mix if you don't want to use stevia use 1 1/2 cups sugar
  • 2 ounces light cream cheese 4 tbsp., cut into 8 pieces
  • 3 tbsp unsalted butter melted and warm
  • 3 tbsp light butter melted and warm
  • 2 tbsp vegetable oil
  • 3 tbsp applesauce
  • 1 large egg
  • 1 tbsp non-fat milk
  • 2 tsp pure vanilla extract
  • 1/2 cup cinnamon chips


  • 5 tbsp confectioners sugar
  • 1 1/2 tsp water
  • 3/4 tsp pure vanilla extract


  1. Adjust oven rack to the middle position. Preheat oven to 350°.
  2. Line 3 baking sheets with parchment paper or silpats.
  3. In a medium bowl, whisk together white and wheat flour, baking soda, baking powder and salt. Set aside.
  4. Place sugar, stevia/sugar mix and cream cheese in a large bowl.
  5. Pour warm light and regular butter over cream cheese and whisk to combine. (You will still see some small clumps of cream cheese)
  6. Whisk in oil and applesauce until combined.
  7. Add egg, milk and vanilla extract and whisk until smooth.
  8. Add flour mixture and cinnamon chips and mix with a rubber spatula until it forms a dough.
  9. Using a 2 tbsp. scoop, place 12 cookies onto each baking sheet.
  10. Bake one tray at a time for about 11 to 13 minutes. Cookies should be just starting to brown. Be sure to rotate baking sheet half way through cooking.
  11. Place baking sheet on wire rack and cool for 5 minutes.
  12. Transfer cookies to a wire rack and cool completely.

For the glaze: mix all ingredients in a small bowl and lightly drizzle over the cookies.
