Grilled Sweet Potatoes with Garlic Butter

Ingredients

  • 1/2 tbsp unsalted butter
  • 11/2 tbsp grape seed oil
  • 6 garlic cloves thinly sliced
  • 2 lbs sweet potatoes chopped into 1” pieces
  • 3/4 tsp kosher salt
  • 1/4 tsp fresh ground black pepper

Instructions

  1. Preheat grill on medium-high heat.
  2. Place butter, oil and garlic in a large microwave safe bowl, and cook on high for 30 seconds, or until butter melts.
  3. Add potatoes, salt and pepper mixing well.
  4. Spray a large piece of foil with non-stick spray.
  5. Add potatoes to the center and fold up tightly.
  6. Grill for 10 minutes. Turn over and cook for another 10 minutes. If not done, turn over again and cook for another 10 minutes.
