Ingredients

  • 1 lbs corned beef brisket about 3 ., spice mix not needed
  • 12 oz hard apple cider
  • 2 tbsp black peppercorns
  • 2 tbsp juniper berries
  • 2 tbsp coriander seeds
  • 1 tbsp mustard seeds
  • 1 inch ginger peeled
  • 3 cloves garlic minced
  • 2 large onions quartered
  • 8 medium red potatoes
  • 2 cups sliced carrots
  • 1 medium cabbage cored, cut into 8 wedges

Instructions

  1. Place corned beef into a slow cooker.
  2. Pour over apple cider and enough water to cover.
  3. Place next 5 ingredients into a piece of cheesecloth tied with string.
  4. Place into slow cooker.
  5. Add remaining ingredients to slow cooker.
  6. Cook on low for 8 hrs.
  7. Remove cheesecloth before serving.

Recipe Notes

I calculated  10 Weight Watcher Smartpoints for 3 oz corned beef, 1/2 potato, 3/4 wedge of cabbage and 1/4 cup carrots.
