Strawberry Mousse

  • 1 1/2 cups chopped strawberries
  • 1/4 cup sugar
  • 2 cups unsweetened cashew milk divided
  • 1 envelope unflavored gelatin
  • 1 tsp pure vanilla extract
  • 1/4 cup whipping cream
  • 1/4 cup non-fat Greek yogurt


  1. Place strawberries and sugar in a food processor or blender and puree.
  2. Pour into a medium saucepan, and bring to a simmer. Simmer until strawberries have reduced in half.
  3. While strawberries are reducing, place 2 tbsp. milk into a small bowl and sprinkle gelatin on top.
  4. Add remaining milk to the strawberries and heat until very warm.
  5. Whisk in gelatin and continue to stir until gelatin has dissolved.
  6. Set aside to cool slightly.
  7. In a bowl, whip cream and Greek yogurt together until soft peaks form.
  8. Stir in a quarter of the whipped yogurt into the strawberries.
  9. Carefully fold in the rest of the whipped yogurt.
  10. Pour into eight 6 oz. ramekins.
  11. Cover and refrigerate for at least 5 hours, or until set.
