Champagne Jello Parfaits

  • 1 (.25oz) envelope unflavored gelatin
  • 1 cup cold champagne
  • 1 cup boiling water
  • 1 tbsp agave
  • 4 whole strawberries each cut into four slices
  • 2 tbsp heavy whipping cream
  • 2 tbsp 2% fat Greek yogurt
  • drop vanilla extract


  1. Place cold champagne in a large heat proof measuring glass (at least 4 cups)
  2. Sprinkle gelatin over the cold champagne and let sit for 1 minute.
  3. Gently stir in hot water until gelatin has completely dissolved.
  4. Stir in agave.
  5. Pour into four chilled champagne glasses.
  6. Place four slices of strawberry in each glass.
  7. Refrigerate until firm, about 3 hours.
  8. Place heavy cream and yogurt into a cold bowl.
  9. Whisk until soft peaks begin to form.
  10. Add extract and whip in.
  11. Top each champagne glass with about a tablespoon of whipped yogurt cream.
