Hard to believe but there was a time when my little one hated pancakes. She never ever wanted to eat them for breakfast. Then she discovered gingerbread pancakes, that she could flip her own pancakes, and then whole story changed. Now pancakes are on heavy rotation in our house. The key seems to be regular maple syrup, sorry no strawberry or blueberry syrup here and a little bit of cinnamon in the batter. I have a spicy girl and cinnamon fanatic. That’s what happens when you start adding cinnamon to baby food. So glad we did that.
Whole Wheat Strawberry Pancakes are perfect for Father’s Day. My little one likes to be involved in making breakfast for important days like this. She will pull up her foot stool next to the counter and grab a spatula to flip all the pancakes. Of course, we have to applaud and cheer after each flip. If she doesn’t quite get it right then the pouty face comes out. She has such a sense of pride when she does it on her own. We are progressing to ladling on the batter. She has already conquered the proper time to flip. She looks at the edge of the pancake and bubbles and determines if it is ready.
We never eat an entire batch of pancakes. There are only three of us. Sorry Stella and Lucy, dogs and cats don’t count when it comes to eating pancakes. Of course, they both think they should. We have little beggars especially our cat, Stella. She is a horrible beggar. Bet you thought it was Lucy our doggie. She will happily “vacuum” any crumbs on the floor but Stella is persistent. She will bat you with her paw. She will try to jump on the table (which she is absolutely not allowed on!). She will meow and rub against you. She is a trip! Luckily pancakes freeze beautifully.
