There is no yeast to bloom. No waiting while the dough rises. You mix up the ingredients in a bowl and bake. How easy is that?

I used healthier ingredients and took out some of the fat by using Greek yogurt so it is fewer calories too. Yes, I also took out some of the sugar. Did you know you can deduct 1/4 cup of sugar from almost any baking recipes? Whole berry cranberry sauce gives you pops of tart cranberry flavor and the cinnamon almond topping provides delicious crunch and texture. It is really easy make this coffee cake. Feel free to make it ahead of time and freeze. It is perfect for Christmas morning or afternoon tea with friends. Ingredients

  • 1 large egg
  • ¼ cup orange juice
  • ¼ cup milk
  • ½ cup plain 0% fat Greek yogurt
  • 3 tbsp. vegetable oil
  • 1 cup (120g) all-purpose flour
  • 1 cup (120g) whole-wheat pastry flour
  • 1/3 cup sugar
  • 4 tsp. baking powder
  • 1 tbsp. orange zest, divided
  • ½ tsp. kosher salt
  • 1 can whole berry cranberry sauce
  • 2 tbsp. turbinado sugar
  • 2 tbsp. sliced almonds
  • ¼ tsp. ground cinnamon

Instructions

  1. Preheat oven to 400•. Spray 9-inch spring form pan with non-stick baking spray.
  2. In a large bowl, whisk together first 5 ingredients.
  3. Sift together next 4 into another bowl. Stir 2 tsp. orange zest and salt.
  4. Stir flour mixture into egg mixture until just moistened.
  5. Mix remaining zest into cranberry sauce.
  6. Spoon batter into pan.
  7. Spread cranberry sauce over.
  8. Stir together sugar, almonds and cinnamon.
  9. Sprinkle over cranberries.
  10. Bake for 25 to 30 minutes, or until toothpick inserted into the center comes out clean.
  11. Place pan on wire rack and cool for 15 minutes.
  12. Remove sides of pan and cool completely.

    This looks delicious. What am I missing?? Why does the cranberry sauce need to be divided? It all goes on top right?

      Hi Charlotte, You aren't missing anything. I was originally going to put cranberry in the middle but changed my mind. It worked much better on top. Thanks for catching that mistake. I will change the recipe.

  3. this lighter recipe is right up my alley - love using greek yogurt and whole wheat pastry flour. And this would be perfect for my homemade cranberry jam!!
  4. What a delicious and wholesome looking coffee cake.
  5. I made this to take to work and everyone raved about it. They said this is definitely a keeper! The recipe calls for 1/4 tsp orange oil or 1 TBS orange rind and I put in BOTH because I like the orange flavor. I had to buy the white whole wheat flour because I had never used it before. I made it the night before so it cooled overnight before I put the glaze on it and it was perfect. I would definitely recommend this recipe.
