I want to thank everyone who has been so supportive of Food Done Light. I greatly appreciate everyone who reads my recipes and my chatter. I love all the nice comments and support. I hope you will stuck with me over the next couple of weeks as things will be a little rough. I am trying to keep “all my balls in the air” but I seem to be dropping a lot. Luckily next week three incredible women who have absolutely fabulous food blogs will be guest posting for me. The fabulous, Nicole from Prevention RD is first up on Monday, Tuesday is the incredible Abby from Manila Spoon and Thursday is the spectacular, Ann from Fountain Avenue Kitchen. These women not only star healthy, fabulous food but they are also incredibly supportive and inspire me everyday. You are all in good hands.
Monday, my husband will have surgery to repair his mitro valve. You may see a lot of me on Facebook, Google Plus and Pinterest, as I try to do something to occupy my mind while he is in surgery. While it is a major surgery, the success rate is very high and chances of death are minuscule. He will be in ICU for the first night then moved to a room for the next 3 to 4 days. I am hoping he will be home by Friday. Since they are doing the surgery robotically, his recovery time is pretty quick, about 3 weeks. He will have to take it easy with limited work and no lifting. Guess who will be walking the dog! The walking will be good for me, as I have finally managed to get back on my diet and lose 3 pounds. I am usually a stress eater but as we get closer to the date, eating is the last thing I want to do. I am very much looking forward to a few weeks from now when I can report all is well and we are putting all of this behind us. I will try not to have the entire blog revolve around this.
On that note, lets get to the food this week. I shared two very special recipes from my Husband’s family, Mori Dal and Prawn Patia. They are traditional Parsi dishes and are easy to make. The jelly roll is my introduction to Easter. Easter is early this year so I will start with Easter recipes the week after next. I hope you all have a safe and happy weekend.
