Weekly Recap Jan 4, 2013 #fooddonelight

This first week of 2013 is coming to an end.  The holidays went so quickly here and were a tad stressful.  I am almost finally rid of the flu!  I am so getting a flu shot next year.  I am on day 12 and really sick of being sick!  Luckily my little one and hubby did not get it but my parents and Gramma did.  What a bunch we were.  We did manage to play some of the new games my little one got and I got a little cooking done.

Now we are back to the daily grind and dealing with my hubby’s heart condition.  We have appointments with two specialists next week and hopefully will have some answers about how we are going to proceed.  In the meantime, we are cutting out red meat completely and trying to eat vegetarian at least 2 nights a week.  So far the only real issue is cheese!  We all love cheese but hubby wants to cut it out.  It is hard to cook vegetarian without cheese.  I just bought some Nutritional Yeast which is supposed to be some sort of cheese substitute.  I am going to start experimenting with it next week.  So far though, I cannot even bring myself to taste it.  So funny, I could not wait to get it from Amazon and now it is just sitting on my counter daring me to taste it.  By the end of the day, I am going to taste it!  Keep your fingers crossed that I like it.  You know, I should go taste it right now.  I DID IT!  Yes, I really just made myself taste it!  It is really pretty good.  It is slightly smoky and slightly reminiscent of Parmesan cheese.  Oh, now my brain is churning with ideas.  I just need to figure out the calories in it.  It is amazing how one tiny little action can make your day.  I went from feeling blah about life to tasting the Nutritional Yeast and feeling inspired.  This is the one I bought from Amazon.

This week I featured recipes that go along with some my New Year Goals.  #1 Eat less processed food.  My Brioche Roll “Thins” are perfect for that.  I hate those cardboard tasting sandwich/bagel thins.  So I made my own and froze them.  Bread and roll making is really easy once you get the hang of it.  See my recipe for Brioche Thins for tips on making them.  My #2 goal is to eat more veggies and less meat.  My Fennel, Orange & Pomegranate Salad is perfect.  I take seasonal vegetables and fruit and make them into a light, fresh, winter salad.  The salad comes together in minutes and is a great accompaniment to any dish.  I also shared one of my favorite dishes I made last year – Tahini Yogurt Pork Chops.  I used a lean center cut pork chop and marinated it overnight with tahini, Greek yogurt and spices.  Then I threw it on the grill for a quick week night meal.  The pork chops were so tasty.  They will become a special treat in our house this year.

Next week look for an Apple Pear Strudel.  We have been eating pears and apples like crazy this winter.  They have been so incredibly sweet and delicious.  Also look for Butternut Squash Lentils for goal #3 – eat more lentils.  This is an Indian dal with red lentils and butternut squash.  Also my favorite soup this winter Potato, Parsnip and Pear Soup.  Woozer!  That soup was delicious.  I still have a little container in my freezer I am saving to eat for lunch one day.
