I’m looking forward to a fun weekend. Today is my Dad’s birthday. We are going over for dinner to celebrate. On Saturday we are going to a reception at the Indian Embassy. I’m looking forward to the FOOD! Oh, yes, the food should be fantastic and we have a date night. Sounds like the perfect weekend; family time, alone time with my husband and very little that I have to do. I’m looking forward to a little break from the kitchen. The vegan restrictions coupled with no added oil and processed food is proven to be much harder then I anticipated. I always thought I could easily become a vegetarian. Yeah, Not so much now! I am craving meat! Go figure! This too shall pass.
Don’t worry, I’m not giving up on the vegetarian/vegan food. The Northern Bean and Mushroom Provencal really did help to stave off my red meat craving. I am still gaga over homemade bread though. I have been pinning every recipe I see! If you are craving some easy homemade bread, whip up my Jalapeno Cheese Bread. You will be glad you did. There is always room for dessert, too. My Apple Pear Crumble won’t crumble your diet! It is quick, easy and delicious but still fairly low in calories and fat.
Next week I am starting to unveil my Valentine’s recipes. Food Done Light will have two weeks of recipes from a breakfast, cocktail, appetizer and that special dinner. Yes, dessert too! I have been working on a Strawberry cake for quite a while and finally came up with a recipe I love. I hope you like them. I certainly had fun coming up with something special. I just need to figure out what order I am going to roll the recipes out and get to writing.
