Do you have fun plans for the weekend? We don’t! It is hopefully going to be a nice weekend full of laid back family time. I finally got all the Christmas decorations down last weekend and now I need to put all the regular stuff back. We really procrastinated taking the decorations down. Since I was sick all through the holidays I felt like I had not enjoyed them. So we left them up a little longer. Laziness had nothing to do with it! (OK, maybe a little)
Things have been pretty calm here this week. It almost felt like a normal week without doctor’s appointments. It was capped off with a fantastic lunch with a friend (the best gyro salad ever!!) after a really good talk with my trainer and a good workout. My trainer is awesome. She helped me get my “head” together and I feel so much better for working out. Now if I can just remember that tomorrow morning when I don’t want to go to the gym. I’m having a hard time even putting myself on the list of priorities right now. All in all it has been a good week! I feel much more positive and am ready to tackle our next set of obstacles.
What did you think of the recipes this week? I know it is a little silly but I was so proud of my jasmine rice grits! It was something I had been meaning to make forever and finally did. It is a great little side dish and really easy to make. The Cranberry Vanilla Baked Oatmeal was all about hubby. It was light and flavorful but not overly sweet. If you like sweet oatmeal, you will probably need a little extra maple syrup. As for the Butternut Squash Ravioli with Asparagus & Turkey Bacon, that is just comfort food all the way. I threw in a bunch of my favorite foods and came up with it. It is nothing fancy, almost a little “mac and cheese-ish” but still fairly healthy.
Next week’s recipes are going to be a surprise – for all of us! I haven’t sat down to figure out next week. I am thinking Jalapeno Cheese Bread though! Look for a Valentine’s menu starting January 28th. I even have a cocktail to share! Yes, I am excited about it.
I almost forgot. I am going to start a new series on Saturdays. Since I am a total recipe junkie, I want to share other healthy recipes I find from other bloggers and magazines. Saturdays will be Healthy Recipe Roundup time. I hope you have a wonderful weekend with your family.
