We made it! Yes it was that kind of week. I am ever so glad this week is coming to an end. It wasn’t a bad week; it just felt a little out of control. It seemed like there was a different challenge every day. For us stuff like this seems to happen in cycles, long cycles! Overall we are lucky. Even though we have had a lot of “challenges”, things usually turn out OK. I am ready for these challenges to come to an end before my husband’s surgery. It will be stressful enough without these little inconveniences. Yes, it could be worse, perspective.
I am a total type “A” personality so I hate not being in control. It makes me a little crazy. I am hoping for a better plan for next week and feeling a little more on top of things. It is my husband’s birthday next week. So hopefully he will work a little less and take care of himself a little more. Hopefully we can actually get a family dinner in next week. I have to make him his favorite chocolate dessert. He is not a cake fan unless I make carrot cake. His Mom always made this strange frozen chocolate dessert. I say it is strange because it calls for a couple of raw eggs. You don’t cook anything and everything goes in the freezer. Yes, I use fresh, pasteurized eggs. The dessert does happen to be fantastic. I mean really fantastic. If I ever figure out how to lighten it, I will share.
Anyway, I had fun with the food this week. I am so in love with the Strawberry Risotto. If you are not really sure about it, trust me and try it. It is not sweet like a rice pudding. It is a savory risotto with just a hint of sweetness from the strawberries. It is balanced by the tartness of the balsamic glaze. This will make any weeknight meal spectacular. My No Chicken Tofu & Biscuits is a tongue in cheek nod to chicken and biscuits. It has all the flavor but is so much healthier for Heart Disease month. Did you know February is Heart Disease Awareness month? Lastly my Masala Cauliflower is so delicious. It is a quick way to elevate any vegetable. The cauliflower is quicker to cook and prepare in slices rather than floret. The flavor is unbeatable. I hope you will give the recipes a try and, please, let me know when you do. As for next week, I think it is going to be a surprise to all of us. I haven’t sat down to figure it out yet. I have about 20 recipes waiting to be posted. I think Mexican Chocolate Cake may be one of them. What are you feeling like? Salad, or still too cold? Chinese? Flank steak? Crock pot recipe?
