I hope you enjoyed the Valentine menu I shared over the past two weeks. What did you think of my Chocolate Covered Strawberry Cake? I wish I had a slice now. It was a lot of fun taste testing all of these recipes but now I feel like Valentine’s Day should be over. We still have a week to go. I guess I better decide if I am going to cook this menu again or should I get a jump-start on next year’s Valentine menu and try something new. I’m really leaning towards ordering pizza, no cooking, no clean up, no stress. That sounds about my speed right now.
We have such a busy weekend planned. Lots of fun but also lots of work cooking and cleaning. Every time I think I am done cooking for a while, I see something and I just cannot help myself. Like the candied fennel I made for Roasted Beet, Goat Cheese & Candied Fennel Crostini. Our freezer is so full of leftovers because I like to try something new a lot. I really need to start rotating in the leftovers. It is so hard when I go to the grocery store and see something like Blood Oranges. They are only in season such a short time. How can I not want to make Seared Scallops with Blood Orange Glaze?
I am really excited about the recipes that I will share next week. Do I say that every week? It is so true though. A new idea, new ingredient or a slimmed down version of a dish I love makes me so happy. No wonder it is so hard to lose weight. It doesn’t help that I am a stress eater. Plenty of stress right now. Maybe I should whip up a Blood Orange Gin Cocktail. They sure are delicious.
Next week look for a dish that reminds me of our trip to Italy, Strawberry Risotto. Also I converted one of my favorite comfort foods, Chicken & Dumplings, into a vegetarian dish with tofu for Tofu & Biscuits. I know such an imaginative name. Since we could all use a more vegetables in our diet, I’ll share some Roasted Cauliflower with Indian Spices. I have had a request for more meatless dishes as well as more side dishes so I will work on those in the upcoming weeks. I hope you have a wonderful weekend!
