Another week is coming to a close. We had a fantastic long weekend in the North Carolina mountains visiting my husband’s God-Mother. We even had a little snow, not enough to really cover the ground but enough to be outside and enjoy. Even our dog, Lucy, got to have some fun in the snow.
There is something so magical about being up in the mountains. Our cell phone coverage is very spotty so you are forced to put all the technology away. Auntie F. is an awesome cook and always has fabulous soups and fruits for us. I was totally inspired by a vegetable tart she made. It is on my list to make for Easter with some Asparagus. Besides from the fantastic food, there is always good wine and good conversation. I actually lost 2 lbs this week because of her healthy, delicious food. That hasn’t happened in a while. We really needed a few days to de-stress and just enjoy being together.
The rest of the week has been crazy. I feel like I am so behind and starting to feel the pressure of hubby’s upcoming surgery. My husbands Dad and Stepmom arrive next week from Singapore where they live. That is a seriously long flight. I am glad they will be here for the surgery especially since my Father-in-Law is a doctor. He can help translate all the “medical jargon” for me and make sure the hospital staff is doing what they are suppose to. My little one is still blissfully unaware of any of this. She is such a worrier that we won’t tell her until next Friday. We have a plan and just need to stay very upbeat when we talk to her and hopefully she won’t worry too much. I am looking forward to writing this recap in two weeks when all of this is behind us. We just have to keep going and keep positive.
I almost forgot, Wednesday was my husband’s birthday. He had to work late so we celebrated on Thursday. I made one of his favorite Parsi dishes, Prawn Patia with Mori Dal. I am hoping to share the recipe next week. I make this dish quite often but everytime I try to measure all the ingredients it never turns out. When I wing it, it turns out great! I think I got it this time. I measured so I would have the recipe for you but amped up all the ingredients. Fingers crossed that it works. I’ll also explain more about what the dishes are and the history. If you are thinking, “Parsi, what?” I’ll explain all next week with the recipes.
