Do you normally stay in for Valentine’s Day or brave the crowds to go out? We never go out for Valentine’s Day. The service and food are usually bad and the prices are ridiculous. We would rather stay at home and have a nice meal and save going out for another night. Last year my husband was on a business trip so it was just my little one and I. I think we had pizza. I bought some plastic pink champagne glasses from the dollar store for us. She had juice or seltzer and I had wine. She loves to do “Cheers” with the glasses. She thought she was so grown up and it ended up being a special night for the two of us. This year is up in the air again. Another business trip is looming. I am hoping he puts it off until after his surgery as it would be a trip to India.
That is a such a long flight. I really don’t want the additional stress of him on the flight and the time change just for a couple of days. We also had planned a special family getaway for the weekend after. We are trying to maximize our family time and lessen the stress which is coming. In case you do not know what I am talking about (I mentioned it in yesterday’s Strawberry Banana Baked Oatmeal), my husband has to have his mitro valve replaced. Surgery is set for the beginning of March. It is a “big” surgery but luckily they will do it robotically which will lessen his hospital stay and recovery. He will be hospitalized for about 4 days then off work for about 3 weeks. Deep Breath! That is about as much as I can handle about that for now.
I have had a lot of fun playing around with a Valentine’s menu for the blog. It’s funny since we had to try all this out, I feel like we have already had Valentine’s dinner. Maybe on the actual day we should start to get ready for Cinco de Mayo or the next holiday! I have already planned to do Thanksgiving and Christmas recipes in July. Getting off topic, back to the Valentine’s recipes. If you like gin, you will love my Blood Orange Gin Cocktail. If you don’t like gin, try it with vodka or tequila. It is super good. The Roasted Beet, Goat Cheese & Candied Fennel Crostini was all about my desire to make candied fennel. Wow, is that stuff good. Lastly, Strawberry Banana Baked Oatmeal is a fabulous breakfast. I call it my morning love letter to my husband. I hope you enjoy them.
