Another week has just flown by. The serious countdown for Christmas has begun, 3 DAYS! I have not wrapped a single present yet. Luckily I am a speed demon when it comes to wrapping. When I was in College, one year I worked at a Department Store in their gift wrapping department. I have serious gift wrapping skills. It’s a good thing I have something to fall back on.
This week has been another roller coaster ride for us. We are happy my Grandmother is visiting for Christmas and looking forward to having some fun. My daughter is thrilled that her Great-Gramma is here. They are quite cute together. We took them both to the American Girl Store for lunch along with the doll, of course. That was an interesting experience. My daughter loved it but I was expecting a little more. I’m not sure what, just something a little more to do with the doll.
My hubby had a second opinion regarding his heart which threw us for a little loop. Trying to digest his treatment plan and figure out what is right. Wish I had a crystal ball. At least his health seems to be improving so we have a lot to be thankful for. I’m basically trying to keep my head from exploding.
Luckily this little blog helps to keep me sane. I was thrilled to be able to share one of my favorite appetizers with you and my daughter’s new favorite dessert. I also threw in an easy meal using leftovers.
I made a Ham, Cheese and Green Onion Souffle using leftover Orange, Apricot, Malta Ham. My daughter helped me make this. Pair this delicious souffle with a salad for the perfect light dinner. Caesar Salad Parmesan Tacos are a fantastic appetizer to serve at a dinner party. They are whimsical and the perfect light bite. I melt parmesan cheese and let it cool into the shape of a taco and fill with Caesar salad. Lastly, Chocolate Gingerbread Tea Cakes, they are moist and tender with a light fresh ginger and molasses flavor. The chocolate really compliments the molasses and mellows it slightly. They are irresistible.
I plan on taking next week off so there will be no new recipes. I will be up and running the next week. We are all going to need new light recipes to get rid of the Christmas weight!!
