Howdy!  I probably should say Hola!  My brain has totally transported to Mexico this week.  I decided to take a vacation with my food.  Do you like to do that?  If I can’t go on vacation, I like to cook dishes from that country or with common ingredients.  That is what I did this week to get ready for Cinco de Mayo.  Mexican just happens to be my daughter’s favorite food.  Since she was about 2 years old, her favorite food has been cheese enchiladas.  We have eaten in so many Mexican restaurants letting her sample different ones.  She begrudgingly ate some of my Crab Mango Enchiladas.  I cooked her a cheese enchilada to have too.

I did have a lot more success with her eating my Fruited Black Bean Salad.  This salad is so light and refreshing.  I love how the flavors all came together.  The Tropical Fruit Bread with Papaya Cream Cheese is so delicious too.  I love being able to cook with mango and papaya.  They are some of my favorite fruits.

We are going to continue the Mexican menu next week with an appetizer and dessert.  Then it is a Mother’s Day celebration.  Every year we make an English High Tea.  So I am going to share sandwich, bread, scones and a dessert recipes with you.  I hope you will enjoy it.  If you are like me, you end up cooking half of Mother’s Day anyway.
