I can finally tell Spring is here. If you live in Georgia, you know from the pollen levels that the trees are blooming. I never knew what pollen looked like until we moved to Georgia. You can actually see the yellow dust on everything; cars, the road, any furniture outside. It is unbelievable the amount of pollen in the air. I can also tell from my stuffy nose, itchy eyes and constant sneezing. Oh boy Spring is here. Besides from the pollen putting a little damper on it, the weather is beautiful. We are going into the 70’s during the day but still cooling off at night. These few weeks of perfect weather are so fleeting.
One of my favorite reasons for Spring is the produce. I love going to the grocery store right now. All of the fruits and vegetables I have been missing are there. I feel like a kid in the candy store. I want asparagus, mango, papaya, leeks, artichokes, lemons, limes. I cannot narrow it down to just a few. I want to take them all home with me.
I haven’t had a chance to do much cooking this week though. My daughter was on Spring Break so we tried to cram in as much fun as we could. That meant eating out way too much this week! We are going to stay home this weekend and I’m going to cook! It is time to BBQ and use the smoker. I am in the mood for lighter more refreshing food.
This week’s recipes were a little bit of Spring and a quick weeknight meal. My Apricot Chicken Tagine is an easy weeknight meal. You don’t need a tagine to make it. Although it is fun to scour TJMaxx to see if you can find a deal on one. We are so lucky we get fresh strawberries from Florida already. My lightened Strawberry Pie was perfect for those gorgeous ruby gems. Cute little baby zucchini are in season now. I lightly sautéed them and added some lemony breadcrumbs for Baby Zucchini with Toasted Lemony Breadcrumbs.
