There is some type of magic that happens when you grill vegetables. It is similar to the effect of roasting them but with a little fairy dust sprinkled on. I think it is the smoke and char from the grill adding a little va va voom to them. One of my favorite things about a grilled vegetable sandwich is that it can be huge. Why skimp on the veggies? I am forever telling my husband the same thing. When he is making his plate for dinner, he takes a small amount of vegetables. Why? Veggies are almost free food, fill up on them. I love filling half of my plate with vegetables. Then I can eat more.

For this veggie sandwich, I decided to add the spices I would use on a steak. I used KC Masterpiece’s new BBQ Sauce & Dry Rub Mix. This stuff is cool. You can make it a sauce by adding some type of liquid from water to beer to juice. I used it as a dry rub for my vegetables and added a little to the mayonnaise to really amplify that delicious BBQ flavor. Did you know KC stands for Kansas City?  The barbecue sauce was created 35 years ago. A doctor actually created it for a barbecue contest which he won. . He stopped practicing medicine and started a barbecue sauce company. So it is very too late to follow your passion. A man after my own heart.

That is when the eggplant and zucchini that I use is at its best anyway. If you don’t want to fire up the grill, go ahead and roast the vegetables. You could even go wild and add some yellow squash. Make it your own by using your favorite summer vegetables. You can make KC Masterpiece BBQ Sauce & Dry Rub Mix your own too.

There are three different flavors to choose from. I used the Spicy Habanero. Man, is this stuff good. It has only a slight spice to it so don’t worry about needing a huge jug of water to put out the fire in your month. This one is a little sweet, a little spicy and a little savory. I loved it on my veggie sandwich. It is also versatile.

Grilled Habanero Vegetable Sandwiches with Spicy Cilantro Mayo

Ingredients

  • 1 eggplant about 1 1/4 lbs., 1/4 inch slices
  • 2 medium zucchini 1/4 inch slices
  • 1 medium onion 1/8 inch sliced rounds
  • 8 oz. sliced portabella mushrooms
  • 2 tbsp. grape seed oil
  • 2 tbsp. KC Masterpiece Spicy Habanero BBQ Sauce & Rub mix divided
  • 2 tbsp. reduced fat olive oil mayonnaise
  • 3 tbsp. 2% fat plain Greek yogurt
  • 1 tbsp. chopped cilantro
  • 2 roasted red peppers sliced
  • 1 large tomato sliced
  • 8 leaves of leafy green lettuce
  • 4 whole-wheat hoagie rolls

Instructions

  1. Heat grill to 450•. Oil or spray grates well. *
  2. Skewer onions with a toothpick to keep the circles intact.
  3. Place eggplant, zucchini and onion in a large bowl.
  4. Toss with oil and 5 tsp. rub mix.
  5. Place vegetables onto the grill and cook for 1 1/2 to 2 minutes per side.
  6. In a blender mix together, mayonnaise, yogurt, cilantro and 1 tsp. rub mix.
  7. Cut rolls in half.
  8. Spread mayonnaise on rolls.
  9. Remove toothpicks from onions.
  10. Top with layers of eggplant, zucchini, onion, red pepper, tomato, lettuce, and mozzarella.

Recipe Notes

Use a mandolin for quick slicing
*You can roast the vegetables in a 425• oven for 10 minutes per side.
