This is an ode to my two favorite ingredients, espresso and yogurt. My first thought in the morning is for my cappuccino. I tell myself, if I get out of bed, I can have a big cappuccino. It is my reward to sliding my feet out of bed and shaking the cobwebs from my brain. Is it strange that I consider my espresso maker a prized possession? One cup, and I am one happy camper. Sometimes I will treat myself with a cup in the afternoon. On a hot day, the last thing I want is something warm to drink.
That is where this scrumptious smoothie comes in. A shot or two of espresso (you can use regular coffee) and my other favorite ingredient yogurt are blended with a little protein powder and ice, if you so desire, for a refreshing afternoon pick me up. Oh, it feels so decadent to have a Vanilla Cappuccino Protein Smoothie in the afternoon. It puts me on cloud nine.
I like to add my favorite yogurt, Yulu vanilla bean yogurt. Have you seen it? This is a new Australian inspired yogurt, although it is made in the USA. It is creamier than Greek yogurt and has 9 grams of protein per serving. Yulu double smooths the yogurt to give it a creamy texture. I love that it brings delicious flavor and protein to my smoothie without the tang of Greek yogurt. It has a the clean, fresh flavor and is perfect in a smoothie or just enjoying with a spoon. If you cannot find it at your local grocery store, ask them to stock it for you.
This summer while I am trying to get through the day working and taking care of my little one, I plan on enjoying a little “me” time with a cool and refreshing Vanilla Cappuccino Protein Smoothie. Each sip washes away the stresses of the day and gives me much needed energy. Ok, time to run to the kitchen and blend up another one. Sip away!
