Start your Day with Strawberry Banana Baked Oatmeal. This dish is heart healthy. Mashed bananas take the place of oil. Wheat bran adds an extra boast of fiber. You can grab it and go. I call this dish my love letter to my husband. It is my way of keeping his heart healthy.
When you get home make yourself a Blood Orange Gin Cocktail. Fresh blood orange juice sweetens up a Gin Fizz.
Sip away while you make put together Roasted Beet, Goat Cheese & Candied Fennel Crostini. You can have the beets and fennel already cooked. Putting it together will be a breeze.
Then you are ready for the main event. Cook some rice and prep the Tamari Roasted Kale. This is a very quick cooking side dish. This might be a good time to open a bottle of wine.
Then whip up my Seared Scallops with Blood Orange Glaze. Be sure your scallops are very dry and the pan very hot. Don’t overcook them! They will be spectacular.
