Twice Baked Potatoes Stuffed with Roasted Garlic Cheese

It was the year of the Baked Potato in our house. Yes, really! It only took my daughter 8 1/2 years to discover she adored baked potatoes. Thinking back, we did not eat baked potatoes very often. The potatoes themselves are healthy, yes even the white ones. They were getting a bad wrap for a while, but that is changing again. The problem is the toppings. We all love a baked potatoes loaded to the gills with butter, sour cream, bacon, cheese and green onions. Are you counting up the calories for each of those? I don’t even want to know.

My husband splurged on a loaded baked potato, while we were on a cruise. He gave a bite to our daughter, and she ate his entire potato. The waiter brought another for him. She adored every single bite and even licked the fork afterwards. I solemnly promised we would have baked potatoes at home. She did not want to be denied ever again.

So, I didn’t exactly make a loaded baked potato. I decided to make Twice Baked Potatoes instead. This way I controlled the cheese and other toppings. She, of course, was quite suspicious. These were not what she was expecting. Where was the dollop of sour cream? I did get extra points for the melted cheese on top, but still she wasn’t sold on these Twice Baked Potatoes. After a bite, she came around. These are cheesy, but you can still taste the potato. It was like combining two of her favorite potato dishes, mashed potatoes and baked potatoes into one. This was one happy dinner with lots of yums and delighted sighs.

Twice Baked Cheese Stuffed Potatoes

Ingredients

  • 2 medium baking potatoes
  • 1 head of garlic
  • 1/4 cup 2% fat milk
  • 1/4 cup 2% fat plain Greek yogurt
  • 4 oz. reduced fat shredded cheddar cheese divided
  • 3/4 tsp. Kosher salt
  • 1/4 tsp. fresh ground black pepper

Instructions

  1. Preheat oven to 450•.
  2. Prick the potatoes with a fork and place in the oven.
  3. Cut off the root end of the garlic and wrap in foil.
  4. Place in the oven with the potatoes and bake for 1 hour, or until potatoes are fork tender.
  5. Reduce the oven temperature to 350•.
  6. Let the potatoes cool until you can safely handle them.
  7. Cut the potatoes in half lengthwise, and place onto a baking sheet.
  8. With a spoon, scoop out the inside of the potato leaving about 1/4 inch border of potato attached to the skin. Place the potato filling into a medium bowl.
  9. Squeeze the roasted garlic into the bowl with the yogurt, half of the cheddar cheese, salt and pepper.
  10. Cover each potato half with the remaining cheese.
  11. Bake for 30 to 40 minutes.

    I am not the average loaded potato person. Only salt and pepper for me. No butter either. Odd I know, but I love it. These do look very tasty.

  5. Ok I know I came here to comment on these stuffed potatoes but those salt and vinegar fries at the bottom totally caught my eye. I need to try those immediately!

      Hi Kacey, I never realized I never made baked potatoes until my little one loved eating one on a cruise. I don't think I had made twice baked either, but it definitely won't be the last time.
  7. My favorite way to eat potatoes? Any way you give them to me! LOL In fact, I love mashed potatoes in particular so much that we had a mashed potato BAR at our wedding reception. Yup, self serve potatoes with tons of toppings, served in margarita glasses. Now that's what I'm talking' about! And I, like you, have moved to using Greek yogurt in ours, and I think I actually like it better than sour cream! Yum!
