What do you do with leftover turkey? Make some appetizers for a Christmas Party. Turkey Pot Pie Bites are a little taste of pot pie in a bundle of phyllo.  Enjoy all the flavor without all the calories and fat.

This time of year I am not stressing about making food for Thanksgiving or Christmas. I’m not overly consumed with what to buy for Christmas. This time of year, the main thing on my mind is appetizers! Oh yes, those little bundles of deliciousness consume my thoughts. Do you just love small bites of food? I just love appetizers. I love their size, and that I can have so many different varieties and flavors at one time. How cool is that? Most importantly, appetizers are what we serve at our Christmas party. Lots and lots of appetizers for about 40 people. I’ve got my menu planned. I’ve set up a cooking schedule and I can’t wait. It is my most favorite night of the year, or really close anyway.

These delicious bundles of turkey pot pie wrapped in phyllo will be a hit. Who doesn’t want a bite of comfort food? It will be a new feature this year along with about 20 of our other favorite recipes. Oh my! Even if you only take one of everything, there won’t be room on your plate. It definitely isn’t a diet night. It will be my weekly night off. A delicious plate of appetizers and a glass of wine, along with good friends and family and fun conversation make it a perfect night.

I remember when I was a kid, my parents buying a case of those frozen pot pies. My Dad was in the Air Force and didn’t really make enough money to support us. The grocery store had a big sale so they stocked up. I loved every bite. I could happily eat them every night. My love for all things pot pie has not died. I haven’t had a frozen one in probably 20 years, but I do love to make them. You can find my Chicken Curry Pot Pie on the blog. It is definitely a lighter version thanks to phyllo dough.  I always thought it as all about the crust, but I was so wrong.  Sure I love that buttery flavor, but it is the mix of the gravy from the filling that mixes with a crunchy crust that really makes my heart go pitter patter.  Phyllo dough easily gives me all of that without the fat from the butter.

Use up your leftover turkey and make these delectable Turkey Pot Pie Bites.  You can even freeze them.  Don’t cook them.  Just place them spread out on a baking sheet and freeze.  When they are frozen, pop them into a freezer bag.  Then you put them into a hot oven without defrosting first.  You’ve got a jump up on appetizers for a party or unexpected guests or my personal favorite,  friday night appetizer dinner.

  • 1 tsp. oil
  • 1/4 medium onion, cut in quarters
  • 1 medium carrots, roughly sliced
  • 1 stalk celery, roughly sliced
  • 3 oz. potatoes, roughly chopped
  • 1 garlic clove, minced
  • 1/4 tsp. dried oregano
  • 1/4 tsp dried thyme
  • 1/4 tsp. dried sage
  • 1 tsp. kosher salt
  • 1/8 tsp. fresh ground black pepper
  • 1 cup shredded turkey breast
  • 1/2 cup 2% milk
  • 1 tbsp. flour
  • 7 sheets Phyllo dough, defrosted in the refrigerator
  • Non-stick cooking spray


  1. Place onion, carrots, celery, potatoes and garlic in a food processor. Pulse until very finely chopped.
  2. Heat a large non-stick skillet over medium heat with the oil.
  3. Add the onion mixture and cook until tender, about 10 minutes.
  4. Add oregano, thyme, sage, salt and pepper. Cook for 1 minute.
  5. Add turkey, cooking until hot.
  6. In a small saucepan, heat milk and flour over medium heat. Whisk continuously until the milk thickens, about 10 minutes. Turn off the heat and let it sit for 5 minutes. It will continue to thicken as it sits.
  7. Pour into the chicken mixture and stir.
  8. Let cool.
  9. Preheat oven to 375°.
  10. Lay out phyllo dough on a work surface. Cover with a layer of damp paper towels and a clean dry kitchen towel.
  11. Place one sheet in front of you. Spray with non-stick spray.
  12. Cut phyllo into 4 equal long strips. (You are cutting the short end)
  13. One inch from the bottom of one strip, place 1 tbsp. of turkey. Fold up the bottom of the phyllo up onto the turkey.
  14. Fold the right bottom corner of dough up and over to the left side of the chicken mixture to form a triangle. Take the left corner of the dough and flip it up to meet the left side of the dough.
  15. Take the left bottom corner of the dough and fold over to the right side. Fold the bottom right side up to meet the right corner.
  16. Repeat until the end of the phyllo.
  17. Repeat with remaining phyllo and turkey mixture.
  18. Place on a baking sheet and spray with non-stick spray.
  19. Bake for 20 minutes.
