Turkey Meatball Pizza Casserole is perfect for your dinner tonight. In the first place, it is delicious. Think of it like an upside down pizza. Second, the casserole is easy to put together. In fact in the video I made of this recipe, my daughter is the one putting it all together and stirring. I put the pizza crust on, but she did all the rest. Third, it is loaded with vegetables. In fact, my green vegetable hating daughter gobbled up her slice even with the spinach. She knew the spinach was in there, since she actually put it in the sauce. Score one for Mommy.
Turkey Meatball Pizza Casserole is going to go into a heavy dinner rotation. Since my husband was laid off last year, we have significantly cut back on eating out. I can easily make this casserole for less than the cost of ordering pizza. Plus we get two dinners out of it, so I still get that much needed night off from cooking. My sanity very much needs it.

Turkey Meatball Pizza Casserole
- 1 tsp oil
- 1 ¼ cups diced onion
- 1 ¼ cups diced red pepper
- 8 oz sliced mushrooms
- 12 oz frozen spinach defrosted
- 2 cloves garlic minced
- ¾ tsp kosher salt
- 1/8 tsp fresh ground black pepper
- 28 oz can tomato puree
- 2 oz Honeysuckle White Turkey Meatballs 12 .
- 1 pizza dough
- ¼ cup grated Parmesan cheese
- 1 tsp Italian seasoning
Preheat oven to 375•. Spray a 13 x 9 inch baking dish with non-stick spray.
Heat a large non-stick skillet over medium heat with olive oil.
Add onions, red pepper, mushrooms, spinach, garlic, salt and pepper. Cook stirring occasionally until onions are translucent, about 15 mins.
Stir in tomato puree. Set aside.
Place meatballs in a single layer on the bottom of the baking dish.
Spoon spinach mixture on top.
Roll out dough into a 14 x 10 inch rectangle.
Place on top of casserole. Press crust of pizza onto the baking dish to seal.
Cut a few small slits into the top of the crust.
Spray with cooking spray.
Bake for 20 to 30 minutes, until crust is golden brown.
Sprinkle with Parmesan cheese and Italian seasoning.
