Turkey Pot Pie Stuffed Sweet Potatoes

Skinny down your turkey pot pie by putting it over a sweet potato instead of stuffing in crust.  It’s a healthier way to enjoy those Thanksgiving leftovers.

Do you remember Chicken a la king?  It was a delicious creamy chicken sauce inside a puff pastry shell, serious yumminess.
My hubby and I have been having a craving but it is pretty fattening.  So I figured out a way to lighten it up.  It also used leftover turkey and solves the ancient  question “What do I do with all the leftover turkey from Thanksgiving?”.

When I was a child, we lived in England.  We  often went to a pub that had nothing but potatoes with all different kinds of toppings.  If you were in the mood for seafood, then you could have a seafood thermidor stuffed potato.  How about steak?  You name it, they probably put it on a baked potato.  It was awesome!

I decided to marry up my childhood love of stuffed baked potatoes with another childhood love of chicken a la king.  I made it healthier by using a sweet potato.  This dish still screams comfort food.  In my mind, when any time gravy or sauce is involved, it has to be good.  I even love toast with gravy, that’s it just bread and gravy.  Oh yes, another great childhood memory.  What are some of your favorite childhood dishes?

Turkey a la Sweet Potato

Ingredients

  • 4 medium sweet potatoes, cooked (I did mine in the microwave)
  • 1 tsp. oil
  • ¾ cup finely chopped onion
  • ½ cup finely chopped carrots
  • ½ cup finely chopped celery
  • 8 oz. sliced mushrooms
  • 1 tsp. kosher salt
  • ¼ tsp. fresh ground black pepper
  • ¼ tsp. poultry seasoning
  • ½ tsp. dried thyme
  • 1 ½ cups fat free milk
  • 1 ½ cups low sodium chicken broth or turkey stock
  • 3 tbsp. flour (I used whole wheat)
  • 8 oz. cooked turkey breast or thigh, cubed

Instructions

  1. In a large saucepan, heat oil over medium heat.
  2. Add onion, carrot, celery, mushrooms, salt, pepper, poultry seasoning and thyme. Cook until vegetables are tender, about 7 minutes.
  3. In a medium bowl, whisk together milk, broth and flour.
  4. Pour into the saucepan, stir very frequently and bring to a simmer. Cook until slightly thickens.
  5. Add turkey and heat until turkey is hot.
  6. Cut potatoes in half and serve turkey gravy over potato.
