Do you remember Chicken a la king? It was a delicious creamy chicken sauce inside a puff pastry shell, serious yumminess.
My hubby and I have been having a craving but it is pretty fattening. So I figured out a way to lighten it up. It also used leftover turkey and solves the ancient question “What do I do with all the leftover turkey from Thanksgiving?”.
When I was a child, we lived in England. We often went to a pub that had nothing but potatoes with all different kinds of toppings. If you were in the mood for seafood, then you could have a seafood thermidor stuffed potato. How about steak? You name it, they probably put it on a baked potato. It was awesome!
I decided to marry up my childhood love of stuffed baked potatoes with another childhood love of chicken a la king. I made it healthier by using a sweet potato. This dish still screams comfort food. In my mind, when any time gravy or sauce is involved, it has to be good. I even love toast with gravy, that’s it just bread and gravy. Oh yes, another great childhood memory.
