I cannot stop thinking about taking a vacation.  I am day dreaming about it and even get butterflies in my stomach when I think about it.  The only problem is, we aren’t going on vacation in the near future.  Why am I getting so excited about something that isn’t happening for a few months.  I really have to stop driving myself crazy with these day dreams of tropical weather.  My yearning for a tropical vacation is even showing up in the food I want to make.  I’ve had a Tropical Grilled Shrimp Salad on my to-do list since last year.  Since I can’t visit the Tropics right now, I decided to make-believe I am there by cooking a dish that reminds me of it.  I can take a bite of this delicious salad, close my eyes and pretend I’m in the Tropics with the sun beating down, a light breeze blowing my hair and a fruity drink by my hand.

Grilled Tropical Shrimp with Mango is a simple recipe and relies on good ingredients.  One of which is olive oil.  Luckily, I received a bottle of Pompeian Varietal Olive Oil.  It is a mono-varietal extra virgin olive oil which means the olive oil is made from one type of olive.    I received Picholine,; which is a medium bodied extra virgin olive oil. By coincidence that is how I like my wine too.  They also have Arbequina, which is mild and Koroneiki, which is full-bodied. I love the idea of a medium-bodied olive oil because a little will shine through.  I always use “good” olive oil in a salad dressing and this one was perfect.

I also used it in my marinade.  The flavor pairs well with the sweetness in the marinade.  I always try for a complete flavor profile in a salad.  Huh?  That just means I want some sweetness, tartness,  a little saltiness and something crunchy.  Picholine olive oil provides a little tartness to the marinade and dressing.  It helps to balance the sweetness from the fruit and the shrimp.  If I was using red meat then I would use the full-bodied, Koroneiki olive oil.  Red meat can take a lot of flavor.

One of the best ways to figure out what olive oil is best, is to taste it. Olive oil tasting is starting to become as popular as wine tasting.  When we were in Asheville, we went to an “olive oil” store and tasted their different varieties.  Now I can go to my local grocery store and buy the different variety of Pompeian Varietal Olive Oil.  I think it is time to have an olive oil tasting party.  I think my friends would go for that.  There really is so much commonality between olive oil and wine.

An added bonus for me is the responsibility of Pompeian. I am forever trying to walk a tight rope between processed and unprocessed food. That isn’t an issue with this olive oil. Pompeian allows me to find out exactly how my bottle of olive oil came to be.  Each bottle is labeled with a tracking code so you can go to the website to see where your olive oil was bottled and when.  Mine is from Morocco.  I love the accountability of this.  I know exactly where my bottle of olive oil is from and know there is nothing else in it.  When a company goes the extra mile to be accountable for a healthy product, they gain my loyalty.  Since I don’t have a bunch of olive trees in my backyard (wouldn’t that be nice), I am happy to buy olive oil that is made responsibly.  I’ll be adding the other two flavors, Arbequina and Koroneiki, to my olive oil collection. Tropical Grilled Shrimp Salad with Mango

Ingredients

  • 1 lb. shrimp, peeled and deveined
  • ¼ cup tequila
  • ¼ cup chopped mango
  • 2 tbsp. chopped cilantro
  • 1 tbsp. Pompeian Varietal Picholine olive oil http://www.treetobottle.com/
  • 1 garlic clove, minced
  • 1 tbsp. honey
  • ½ tsp ground cumin
  • 1 tsp kosher salt
  • 2 tsp. pureed chipotle in adobo
  • 1 tbsp. water
  • 8 cups arugula
  • 1 cup sliced mango
  • 1 cup sliced papaya
  • 1 cup sliced jicama
  • ½ cup sliced red onion
  • ¼ cup sliced avocado
  • Dressing:
  • ¼ cup chopped mango
  • ¼ cup chopped papaya
  • 2 tbsp. fresh orange juice
  • 2 tbsp. chopped cilantro
  • 2 tbsp. fresh lime juice
  • 1 garlic clove, minced
  • 2 tbsp. Pompeian Varietal Picholine olive oil
  • 1 tbsp. water
  • ½ tsp. kosher salt

Instructions

  1. In a food processor, puree tequila mango, cilantro, olive oil, garlic, cumin, salt, chipotle and water. Pour into a plastic bag and adds shrimp. Toss to coat shrimp completely.
  2. Put shrimp onto 4 skewers
  3. Refrigerate for 30 minutes to an hour.
  4. Heat a grill or grill pan to medium high heat. Oil grates well.
  5. Place skewers onto the grill for 2 minutes per side.
  6. Divide arugula, mango, papaya, jicama and onions into 4 bowls. Top with 1 skewer.
  7. In a food processor, puree all ingredients for dressing.
  8. Drizzle 2 tbsp. of dressing onto each salad.
