My go-to summer vegetable recipe, Tomato Salad with Feta. It is quick, easy, vegetarian, healthy and only a handful of ingredients.

We have lived on this healthy Tomato Salad with feta this summer. As soon as heirloom tomatoes are in the store, I am all about this super easy and quick salad. Literally this salad comes together in five minutes. It tastes so good and looks pretty, I will even serve it to guests. Our neighborhood best friends just moved to Arizona. (Makes me so sad, puppy dog face sad.) We had them over for one last dinner, and I made this tomato salad for them. I felt a little pressure to make something really special as it would be our last time together for a while. All I needed was really good heirloom tomatoes. That is the key. I also splurged on a splash of my precious extra virgin olive oil we brought back from Italy. This stuff is like liquid gold. They are worth it though.
We have lived in this neighborhood for seven years, and El was one of the first people we met. At the time they had a lovely doggy, (OK more wolf than dog) that we would see El walking. My husband and daughter are dog crazy so whenever El would stop, we would chat and pat Max. Then my hubby and her hubby met and we became fast friends. We both love food, oh how we love food, cocktails and traveling. It was such an easy friendship. These are the type of people who are there for you in a pinch. I remember the day my husband had a heart attack. I was about 45 minutes away at the time.
He was at his doctor’s office, and they wanted someone to pick him up to take him to the ER. (We will save why they didn’t call an ambulance for another day) Any hoo, El was who I called. Nothing like calling a friend and asking if they can pick up your husband and take him to the hospital because he had a heart attack. You know you have some good friends when they drop everything and wait at the hospital for you to get there. We can laugh about it now. That isn’t a phone call you want to make or receive.
Luckily the majority of our times together have been great. El would even be my sous chef for my Christmas party. I’d promise a cocktail or lunch and she would come over and help me wrap pastry around hundreds of little appetizers. When we went on vacation, she was our pet sitter. I forgot to mention that they are the reason we have Lucy, our Golden Retriever. They found her abandoned on some railroad tracks. She was emaciated and had bloody paws.
They took her to the Vet where she was nursed back to health. They told us about her, and we adopted her. Lucy and El’s dog Max were best friends until Max passed away from cancer last year. El is like Lucy’s second Mommy. Lucy adores all of the family actually. She cannot contain herself when any of them knock on the door. She has to give hugs and kisses. We miss them so much already, and they have only been gone a little over a week.
At least we can cherish our memories and last dinner together when we enjoyed this heavenly tomato salad. It reminds me of the perfect friendship, harmony of flavors, a little salty, a little tangy, easy and something you can count on again and again. Make it for yourself. You will be glad of this quick and easy recipe you can depend on again and again, just like a good friendship.

Tomato Feta Caprese Salad
- 4 heirloom tomatoes , sliced 1/4 inch thick
- 1/2 cup sliced red onion
- 1 1/2 oz . crumbled feta cheese
- 1 tbsp . balsamic vinegar
- 1 tbsp . good quality extra virgin olive oil
- 1/4 to 1/2 tsp. kosher salt
- 1/8 tsp . fresh ground black pepper
Arrange tomatoes and onions on a plate.
Sprinkle with feta cheese.
Pour vinegar and oil around tomatoes.
Sprinkle with salt and pepper.
