Welcome to 2015!

At Food Done Light, we are starting out with some healthy comfort food. It is part of my mission to change people’s perception of what healthy or “low calorie” food is. It isn’t about eating rabbit food or a bunch of steamed vegetables. The point is just to make delicious food that satisfies your taste buds, stomach and soul. When you take a bite, you shouldn’t think “Oh, this is low calorie”. I hope you just think “Yum.” That is why I am starting off with Tomato Basil Soup with Grilled Pimento Cheese Sandwiches. Tomato basil soup is so simple to make low calorie and low fat. It is a no brainer. The pimento cheese is an indulgence, but with a couple of healthy food swaps it can fit into your healthy eating plan.

 

Tomato soup with grilled cheese also reminds me of my childhood. This was a frequent lunch for us. It is cheap and easy. My daughter still loves the combination for lunch or dinner. I bet a lot of you remember having it for lunch too. Cheese and tomatoes were born to be together. Basil gives the soup a little update. Pimento cheese is a little nod to the South, where we live now. I had no clue what pimento cheese was until we moved to Georgia. I definitely did not know how much I loved it. I learned very quickly how good pimento cheese is. I especially love it on a burger and put it on one on the blog, Bacon Jalapeno Burgers with Pimento Cheese.  If you have never had it, you must!  Try something new in 2015, pimento cheese.  You will not be disappointed.

This is a dinner everyone will love. Kids don’t seem to mind eating vegetables when they are in soup. They don’t need to know that the soup is pretty much nothing but vegetables. If they are like me, I am a dunker. Oh yes, I love to dunk my grilled cheese into the tomato soup. The crisp, cheesy bread soaks up some of the savory, tomato soup for the most perfect bite. I like to savor each bite, and I make sure I do not eat the grilled cheese too fast. I like to have a bite of grilled cheese left with the very last spoonful of soup. My daughter likes to dunk her sandwich too, but she eats all of the sandwich then eats the soup.

Tomato Basil Soup with Grilled Pimento Cheese Sandwiches #sundaysupper

Ingredients

    Soup:
  • 2 tsp. olive oil
  • 1/2 cup finely diced onion
  • 1/2 cup finely diced carrot
  • 1/2 cup finely diced celery
  • 2 tsp. kosher salt, divided
  • 1/4 tsp. fresh ground black pepper, divided
  • 3 garlic cloves, minced
  • 2 tbsp. tomato paste
  • 1/2 cup red wine, like Pinot Noir
  • 2 (28 oz.) cans fire-roasted crushed tomatoes
  • 2 cup low-sodium vegetable broth
  • 1 to 2 tsp. sugar
  • 1 cup lightly packed chopped fresh basil
  • Pimento Cheese
  • 6 tbsp. nonfat Greek yogurt
  • 6 tbsp. minced pimento
  • 3/4 cup (3 oz.) shredded low-fat cheddar cheese
  • 3 tbsp. shredded Monterey jack cheese
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 8 slices whole wheat or whole grain bread
  • 8 tsp. light butter

Instructions

    For the Soup:
  1. Heat a Dutch oven or large pot over medium heat.
  2. Stir in the first 4 ingredients, 1/2 tsp. kosher salt and 1/8 tsp. black pepper.
  3. Cook, stirring occasionally for about 15 minutes.
  4. Stir in the garlic and cook for another minute.
  5. Stir in the tomato paste and cook, stirring constantly, for 2 minute.
  6. Stir in the wine and bring to a simmer. Simmer until the wine has almost completely evaporated, about 7 minutes.
  7. Stir in the tomatoes, vegetable broth, remaining salt and pepper and sugar.
  8. Bring to a simmer and simmer, stirring occasionally, for 30 minutes.
  9. Add the basil and simmer for 15 minutes.
  10. Using an immersion blender, puree the soup
  11. For Pimento Cheese
  12. In a medium bowl, mix together, yogurt, pimento, cheeses, garlic powder and onion powder.
  13. Spread butter on one side of each slice of bread.
  14. Turn the bread over.
  15. Place about 3 tbsp. of cheese mixture on four slices of bread. Top with remaining slice, being sure butter side is up.
  16. Heat a non-stick skillet over medium heat.
  17. Add the sandwiches and cook for 2 minutes, or until bread is slightly browned.
  18. Turn the sandwiches over and cover the skillet. Cook for another 2 minutes.
  19. Serve with the soup.

  18. I love your view of eating healthy. I think the reason a lot of people stray from healthier eating is because they thing it's supposed to be full of bland foods. But it really isn't.
