I am trying to redefine comfort food in our house; trying to think less about meat and more about flavors. So when I had a craving for chicken and biscuits, I thought about the tofu I had in my refrigerator and a way to use it. I replaced the chicken in the recipe with tofu and surprise, surprise it was delicious. A new comfort food was born in our house.
I have a serious thing for biscuits. For years I have been on the quest for the perfect biscuit recipe. I love the fluffiness of a biscuit. Warm butter melting into the crevices or even better sausage gravy makes me all warm and fuzzy inside. Unfortunately I have yet to find a good low calorie sausage gravy. Some day it will come to me. I just need to keep the faith. In the meantime, I have found the most perfect biscuit recipe. It came from Debi, my co-host for Thursdays Treasures, at Recipe for My Boys. She made these fluffy, tall biscuits. They are the best biscuits I have ever had. Be sure to pop over to her blog and check out her wonderful recipe. I lightened them a little and added some whole wheat flour and they are still fabulous. I could eat them everyday. I don’t but I could!
Even though I like tofu, I am a little squeamish about using it. I don’t know why. It is just one of those weird little idiosyncrasies I have. It is a weird little mental block about the texture of tofu. So I decided I would “disguise” the tofu. I basically crusted it with poultry seasoning, salt and pepper. The tofu was nice enough to take on a chicken flavor. It stayed intact during baking and really turned out fantastic. So much so that I was happy to have leftovers the next night. Now I am ready to tackle tofu in other ways.
