I don’t remember the first time I had tiramisu, but I do remember the first time my daughter did. You could see in her face that it was love at first bite. Her eyes lit up, and she got the biggest grin on her face. Then she gobbled it up as quickly as possible. We were on a cruise, the first time she had it. The next time we went into the restaurant, they tried to give her a “kids” dessert. She was not having any of it. She wanted tiramisu. The server looked questioningly at me, then smiled and brought her a huge bowl of it!
I actually did not set out to make tiramisu, and I really did not. Any true tiramisu would use lady fingers. I used graham crackers. In fact I had set out to make an easy no bake icebox cake. However, I kept changing my mind about the filling. Should it be a banana pudding? What about cheesecake? Maybe I should make a strawberry filling. In the end, I wanted that creamy, dreamy filling of a tiramisu. So I ended up with this mish mash of a no bake dessert and tiramisu. It is quite divine.
I love the added freshness the strawberries bring. As you can see, while this dessert is scrumptious, it is not exactly the prettiest on a plate. Sure I could have worked some photo styling magic on it and added some fakery, but I prefer you know what you are getting. It is delicious and your eyes will light up with every mouthful. It may not look the most beautiful on the plate. The strawberries like to slip out the side, but it will be gone in a flash.

No Bake Strawberry Tiramisu Ice Box Cake
- 1/4 cup espresso cooled
- 3 tbsp. Kahlua divided
- 8 full cinnamon graham cracker sheets
- 8 oz. Greek yogurt cream cheese softened
- 1 cup 1% fat cottage cheese
- 1 1/4 cups confectioner’s sugar
- 1/2 cup 2% fat plain Greek yogurt
- 1 tsp. pure vanilla extract
- 1 1/2 cups sliced strawberries
- 1 tsp. dark cocoa powder
In a shallow bowl, stir together espresso and 1 tbsp. Kahlua.
In a food processor, puree cream cheese, cottage cheese, sugar, yogurt, 2 tbsp. Kahlua and vanilla.
Break one cracker sheet in half and another sheet into four.
Dip half of the graham crackers into the espresso mixture and place on the bottom of an 8 x 8 inch baking sheet.
Layer 3 whole sheets and the three small pieces on the bottom.
Spoon half of the cream cheese mixture on top of the graham crackers and spread evenly.
Top with half the strawberries.
Dip the remaining graham crackers in espresso and place on top of the strawberries in a single layer.
Spoon remaining cream cheese mixture on top, then strawberries.
Cover with plastic wrap and refrigerate for at least 4 hours and up to 24 hours.
Dust with cocoa powder before serving.
