It is hard to believe it has only been four months since I posted my first recipe on Food Done Light. The first recipe I posted was my Greek Salmon Phyllo Packets. Fresh, wild salmon get a smear of a feta, olives, grapes then wrapped in phyllo and baked. It makes a beautiful dinner. I was very surprised and how popular the dessert recipes were. In fact the 5 most viewed recipes on my blog were desserts. My Carrot Cake Bread took top honors over my Pumpkin Muffins. You all have good taste. Carrot Cake Bread is fantastic. It has all the flavor of a cake but in a much healthier bread form. For savory items, I was super pleased to see Homemade Turkey Sausage leading the pack. Thyme, Rosemary & Yogurt Roasted Turkey Breast was the next popular and Creamed Spinach was the most popular side dish. The most popular recipe for this week is Caesar Salad Parmesan Tacos.
Just as the world is ever-changing so is Food Done Light and our life. I started this blog as a way to keep myself accountable for eating healthy and losing weight. Life has a way of taking you in a different direction though. I had mistakenly thought I was the one who needed to get healthy before my weight caused medical issues but as it turns out my husband was the one who had the health issue. We are still trying to deal with what a heart attack at 46 years old means and what is the new normal for our life. It is a daily struggle with a lot of ups and downs. It has really caused me to put my health on the back burner as we deal with the stress and pressure of dealing with his heart condition. We still seem to have very few answers.
So this year is going to be about change. I am not really sure what it will mean. I think we are going to have to figure it out along the way. It is going to have to include me getting very serious about my own weight and finding ways to make that a priority. You will continue to see all types of healthy recipes but there will probably be a few more vegan and vegetarian recipes thrown it. We will be cutting our meat intake and our fat intake further down and still try to balance that with the needs of our little 6-year-old. I am also going to try to concentrate on health and exercise more as I did in the beginning of this blog. I need the daily reminder to keep me accountable.
I hope you will stay with me as we head on this new journey. I am not sure where we will end up but it should be interesting. I am sure there will be some detours and quite a few stops and starts and probably a few u-turns. I am hopeful though and ready to tackle whatever is next.
