Low Carb Taco Bites – Lean ground taco meat makes the best filling for Stuffed Mushrooms. Top with Sour Cream and Pico de Gallo for a healthy appetizer.
Appetizers and snacks are hot, hot, hot in September thanks to all those football loving people. With this in mind I decided to create a healthy appetizer to keep us slim and trim. I knew I wanted something low carb and low calorie. Why not kill two birds with one stone? Consequently I thought about stuffed mushrooms. In fact mushrooms tend to be my go-to for a quick side dish for dinner as I live in a house full of mushroom lovers. So I decided to pair mushrooms with beef. After all, mushrooms and beef are one of my all-time food pairings.
Beef Wellington springs to mind. Additionally we love browned mushrooms on steak. For this twist on a stuffed mushroom, I picked up some Certified Angus Beef® lean ground beef. You all know I am loyal to my favorite brand of beef. Next I decided to keep it simple, plus I wanted to quench my taco craving. So this mashup of flavors came together in the form of Taco Stuffed Mushrooms. These tasty little morsels are like healthy taco heaven.
Be sure to pick up some Certified Angus Beef® and try these scrumptious Taco Stuffed Mushrooms. You don’t have to wait for game day to enjoy them. My family sure didn’t. I had planned on serving them for dinner, but my daughter ate most of them when she got home from school. At least it was a healthy afternoon snack. I cannot complain that she eat about 6 mushrooms.

Taco Stuffed Mushrooms
Low Carb and Gluten Free - Lean ground beef taco meat stuffed in fresh mushroom caps topped with cheese.
- ½ lb. lean ground beef I used Certified Angus Beef®
- 2 tbsp. taco seasoning
- 3 tbsp. water
- 2 oz. shredded part skim mozzarella cheese
- 12 small mushroom caps or 6 large
- Optional toppings: sour cream pico de gallo
Preheat oven to 400•.
Brown ground beef in a skillet.
Add taco seasoning and water. Bring to a boil, reduce to a simmer for 10 minutes.
Spray an 8 x 8-inch baking dish with non-stick spray.
Spoon filling into the mushroom caps and place into baking dish.
Top with shredded cheese.
Cover with foil and bake for 15 minutes.
Take foil off and bake for another 10 minutes.
Add any toppings desired.
