Sweet Potato Smores Coffeecake

What no streusel topping?  You didn’t put a streusel topping on this Sweet Potato Smores Coffeecake.  Don’t worry, you won’t  miss it.  Wave bye-bye to streusel and hello to chocolate and marshmallow glaze.  You will be licking your lips for this recipe.  The cake is moist and tender with the flavor of sweet potato.  The crowning glory is the chocolate and marshmallow glaze though.  There could not be a more perfect way to start Thanksgiving day.

Getting to this point took a lot of trial and error, much more error than anything.  Originally I tried a to give this more of a sweet potato casserole feel with oranges and marshmallows.  Holy yuckiness!  It was horrible.  Then I got the smores idea and tried a streusel topping with chocolate and marshmallows.  Well the cake turned out fantastic but the marshmallows on top burnt.  Whoops!  Ok, think, think, think.  There has to be a way to get this to work.  My Mom, in her infinite wisdom, said not to make it so complicated and try a glaze.  Mom knows best.  That was exactly what I was going for.

Sometimes I get a little carried away with an idea or “twist” to a recipe. In my head, it sounds so good and I can visualize how it will look. It drives me crazy when I cannot figure out how to make a dish I am passionate about work.  It will keep me up nights thinking about different methods to make it work.  Luckily my family loves to talk about food so brainstorming ideas often gives me the answer I was looking for.  Even my little one likes to get into the action.  The other day she told me she had a recipe and was so proud of herself when I told her it was a wonderful idea.  It actually was a good recipe.

I think a cup of coffee and a slice of Sweet Potato Smores Coffeecake would be perfect for an afternoon snack too.  I could use a little “pick me up” right about now.  I could eat this cake morning, noon or night.  Try it and see if you miss the streusel topping.

Sweet Potato Smores Coffeecake

  • Cake Batter:
  • 1 ¼ cup (150 )all-purpose, unbleached flour
  • ¾ cup (90)whole wheat pastry flour
  • 1 ½ tsp. baking powder
  • ½ tsp. baking soda
  • 1 tbsp. ground cinnamon
  • ¼ tsp. kosher salt
  • ½ cup light brown sugar
  • ¼ cup sugar/stevia mix or ½ cup granulated sugar
  • 1 cup mashed sweet potato
  • ½ cup egg substitute equivalent to 2 eggs
  • 1/3 cup vegetable oil
  • 1/3 cup 2% fat Greek yogurt
  • 1 tsp. vanilla extract
  • Glaze:
  • 1/2 cup marshmallow fluff
  • 2 tsp. boiling water
  • ¼ cup semi sweet chocolate chips
  • 1 tbsp. 2% fat milk


  1. Preheat oven to 350°.
  2. Spray a 14 cup bundt pan or angel-food cake pan with baking spray. Be sure to spray the center.
  3. For batter: In a medium bowl, whisk together all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt.
  4. In a large bowl, mix together the sugar, stevia/sugar mix, mashed sweet potato, egg substitute, oil, Greek yogurt and vanilla extract.
  5. Slowly add the flour mixture and stir until just combined. Do not over mix!
  6. Spoon batter into the pan and even out with a spatula.
  7. Bake for about 50-60 minutes or until a toothpick inserted into the middle of the coffeecake comes out clean.
  8. Place on a wire rack and cool for 15 minutes.
  9. Remove coffeecake from pan and place on wire rack to cool completely.
  10. Place a piece of wax paper under the wire rack.
  11. In a medium bowl, mix together marshmallow fluff and boiling water.
  12. Heat chocolate and milk in the microwave in 10 second intervals until melted. Stir after each interval.
  13. Drizzle chocolate over the coffee cake. Let dry. Then drizzle marshmallow over cake.

    I would never think it had chocolate in the glaze. It looks so white to me.

      That is actually the marshmallow glaze. I added the chocolate after I took pictures, Charlotte. I really need to make this again and take new pictures.
