Oh man just looking at these pictures and remembering how good this salsa is, makes me wish I could reach into the computer screen and grab a bowl of it. Wouldn’t it be cool if you could grab food right out of your computer screen? It makes me think of Star Trek when Captain Picard would ask for “Tea, Earl Grey, Hot”. It would miraculously appear for him to drink. Sure I love to cook, but there are days I would give anything for a healthy meal to magically appear on the table. Wouldn’t you?
Luckily this Strawberry Salsa is very simple and quick to make. You can have it done in five minutes. I love the savory-sweet mix of this one. Plus you have creamy avocado and crunchy onion. This dip hits all the hot buttons on my taste buds. If you have some left, serve it with grilled chicken or fish. It will be delish. Top a taco with strawberry salsa for a bite of freshness.
I love the idea of serving this for Mother’s Day. It would be delightful on a brunch buffet and add a pop of color to the table. Plus it is easy enough for kids to make. My little one loves to cut fruit and vegetables. She even has her own chef’s knife, a 6 inch. I watch her carefully and make sure she has her fingers tucked under. I don’t want her cutting herself. The great pride she feels makes up for the painstaking time it takes her.
She tries to get every single cut perfect. I am more of a get it done kind of gal, it doesn’t matter if my pieces are not perfectly square. - 2 cups chopped strawberries
- 1/2 cup finely chopped red pepper
- 1/3 cup finely chopped sweet onion
- 1 jalapeno seeds removed, finely chopped
- 1/4 avocado finely chopped
- 1/4 cup chopped cilantro
- juice of lemon
- 1/2 tsp kosher salt
Gently mix together all ingredients in a large bowl.
Cover and refrigerate for 1 hour.
