Sweet strawberries, crisp greens and crunch pistachio crusted tangy goat cheese. Strawberry Salad with Pistachio Crusted Goat Cheese is a scrumptious side dish perfect for a special occasion.
When I thought about writing the post for this Valentine’s recipe, Strawberry Salad with Pistachio Crusted Goat Cheese, I thought I would regale you with a romantic Valentine’s memory.I would conjure up images of candlelit dinners, champagne, and Barry White music playing in the background. Something straight out of a romantic novel. Alas, I couldn’t think of a single Valentine’s memory like that. It’s not to say that my hubby doesn’t try to be romantic in his own way but we have different ideas of what is romantic. Actually of the two of us, he is probably much more romantic. I’m not a “romantic novel” type girl. I like mysteries and books that make my mind go into over drive wondering about the plot twists.
Funnily enough, the Valentine’s Day I really remember was one when my husband wasn’t even home. He was on a business trip so it was just my little one and I. I had stopped at a dollar store and bought pink, plastic champagne glasses and some Valentine’s plates and napkins. She came home from school and we had seltzer water in our cups and did a toast. She was so thrilled. We ordered pizza and watched a movie. Yup, we even ate dinner sitting on the couch (her favorite thing to do). She was so happy with the special Valentine champagne glasses. For a couple of bucks, I made her night which made mine.
I do remember what we cooked for our very first Valentine’s though. That is no big shock to you, if you’ve been following my blog. I almost always remember what we eat. Oh, priorities. We made a Weight Watcher’s recipe with pasta, caviar and smoked salmon. It was quite tasty. We probably had bought cards (after all it was the first). He might have stopped at the grocery store and bought me flowers and that was probably the extent of it. While romance is not really high on our list, being together and remembering why we love each other is. We just like to hang out together and as a family.
Sometimes it is the silliest, strangest moments that make the biggest impact. A couple of Saturdays ago we all were sitting on the family room floor doing planks and push ups. No this is not a normal occurrence in our house but it probably should be. My hubby had come back from his walk and mentioned that his cardiologist wanted him to do planks and sit ups. He was claiming how easy planks were. What?! Hmm, “Let me see you do it, I bet your butt is up!”. I thought to myself. The bum could easily hold a plank for a minute multiple times in a row. It got my competitive streak going. Soon our daughter was trying to do a plank which got us all laughing. It was a totally spontaneous moment and a fun memory. What a great way to break a rut. It made me love him even more. Forget the romance, get on the floor with your partner and have a planking and push up competition.
