Strawberry Rhubarb Gin Cocktail

A refreshing Spring gin cocktail is only minutes away. Make your own rhubarb simple syrup, muddle some fresh strawberries and shake up with a mixture of alcohol and grapefruit juice.

I am finally introducing you to a huge passion of mine, cocktails. A couple of years ago I was all about wine, but I caught the “bug” for cocktail making and never looked back. Come on over to my house at 5pm on a Friday night and I will be whipping up a new concoction. In this case, I decided to celebrate spring with the epitome of Spring combinations, strawberries and rhubarb in a gin cocktail.

Easy gin cocktail

The first step to making a great cocktail is the simple syrup. As the name suggests, it is simple to make. Simply add one part sugar to one part water and cook until the sugar dissolves. In order to save time, I make mine in the microwave. Then you can add flavoring ingredients such as lime zest, mint, ginger or in this case rhubarb. Let the mixture steep then refrigerate until ice cold.

When it comes to cocktails, a gin cocktail is always my top choice. Consequently I tend to keep a couple of different brands in my liquor cabinet. If you do not think you like gin, try a different brand. They are remarkably different in floral and spice content. You may even find some local gin as it has become quite popular. If gin is just not your thing, vodka would be a nice replacement in this gin cocktail.

Strawberry Rhubarb Gin Cocktail

Ingredients

  • Rhubarb Simple Syrup:
  • ¼ cup sugar
  • ¼ cup water
  • 1 stalk rhubarb , cut into chunks
  • Cocktail:
  • 1 oz Rhubarb simple syrup
  • 4 Strawberries
  • .75 oz St Germaine
  • 1 oz Grapefruit juice
  • 1 oz gin

Instructions

  1. For simple syrup
  2. Place sugar, water and rhubarb into a microwave safe bowl.
  3. Microwave on high for 1 minute or until sugar completely dissolves.
  4. Let cool for 15 minutes. Remove rhubarb and refrigerate until fully chilled.
  5. Gin Cocktail:
  6. Add ice to a cocktail shaker.
  7. Pour in all ingredients.
  8. Shake about 20 times and pour entire contents into a glass.
