This healthy pasta salad is based on a spinach salad recipe a good friend gave to me years ago. She and her husband were living next to my parents, and both are the type of people who you instantly like the minute you meet them, warm, interesting and honestly interested in the world. Sadly her husband died a couple of weeks ago. We did not see them much, but when we did it was like picking up where we had left off. The world is short one incredibly nice, humble and genuine man. I count myself lucky to have known him.
