Last year my daughter and I started a new tradition together, Strawberry picking. We went to a local farm during their Strawberry Festival and picked a bucket of strawberries. My daughter loves to go because in addition to the strawberries, she can pet baby chicks and rabbits. Any time she can pet an animal, she is in. She did all the activities at the festival then we went to pick strawberries. I was sure we would get the bucket half way filled and she would decide she was tired. No, she was a trooper and refused to stop until the bucket was full. We had a luscious bucket of beautifully ripe strawberries in no time. Once we had them all, we had to do something with them. This simply fresh Strawberry Pie is an easy way to use fresh strawberries.
Strawberries just happen to be my daughter’s favorite fruit. She loves them in anything. I certainly have been putting them in anything I can lately. You will be seeing more recipes with strawberries in them. This season’s strawberries that we have gotten from Florida have been really fantastic. I really wanted to keep the essence of the strawberry in this pie. That meant making a no bake pie. Each bite is a strawberry explosion. You will savor the sweetness of the strawberries in each divine bite. Fresh Strawberry Pie also happens to look quite stunning too.
This will be a go time dessert for us in the next few months. I loved that I could make small pies or large. They also make great gifts. I gave some of the small pies to some very good friends who had been so helpful during my husband’s surgery. It is hard to ever really repay someone for the great kindness and help they gave but hopefully these little pies tasted like they were made with love.

Fresh Strawberry Pie
- 1 pre-made pie crust or use the crust from my Mini Apple Pecan Pies
- 8 cups strawberries hulled
- 2/3 cup sugar
- 2 tbsp . cornstarch
- Pinch of kosher salt
- 1 tbsp . lemon juice
- 1 1/2 tsp . unflavored gelatin
- 2 tsp . cold water
Cook pie crust according to manufacturer’s instructions.
Cool crust completely.
For filing: slice 2 cups of strawberries and lightly mash. You should have about 1 1/2 cups.
In a small bowl, pour cold water and sprinkle gelatin over the top. Let soften for a few minutes.
Place mashed strawberries in a small saucepan with sugar, cornstarch and salt. Turn heat to medium high and bring to a simmer. Cook stirring occasionally until the strawberries thicken.
Take off the heat and add the lemon juice and softened gelatin. Mix well then cool to room temperature.
Combine the remaining strawberries and cooked strawberry puree.
Pour into the baked pie shell.
Chill for at least 1 hour.
