Strawberry French Toast Roll Up Casserole

I very rarely make french toast. My little one has never been a fan so I just don’t bother. Now a french toast casserole is another matter. While I don’t like standing over a pan dipping and flipping french toast, I love putting a french toast casserole together and being able to serve everyone at once. My little one even loved this one. I cut the roll ups in half for her and let her dip in a little syrup. She devoured the Strawberry French Toast Roll Ups.

On Mother’s Day, my little one loves to bring me breakfast in bed. With a little help from my husband, she could easily make Strawberry French Toast Roll Up Casserole. Of course, she wants her own tray and to eat in bed with me. Yes, I love that part. I remember making breakfast in bed for my parents when I was little. I loved bringing everything up on a tray. It made me feel so grown up. I don’t remember if what I cooked was actually edible but it is the thought that counts, after all.

My parents will come over for Mother’s Day and we usually have High Tea with scones and little tea sandwiches. Mother’s Day seems to be the worst day to go out to a restaurant. The restaurants hike up the prices and are so crowded. Even normally fantastic restaurants seem to have sub-par food because of the high demand. It would be nice to go out and not have any clean up but I’m not sure it is worth the hassle. At least eating at home, ensures fantastic food.

One other plus of eating at home is we can eat in whatever we want; sweats, pajamas, shorts or dress it up a little. Sometimes we will break out the china which gets used about twice a year. We use to make the tea sandwiches ahead of time but now we just make all the parts. Part of the fun is making your own little concoction. Someone might want egg salad with a piece of smoked salmon on it or a cucumber sandwich with some brie. Someone may want a sandwich with a little bit of everything. We all get to eat what we want and share our latest and greatest flavor combinations. Even my little one will get in on the act. She will happily tell everyone what she put on her sandwich and how it is the best ever. Mother’s Day would not be much of a celebration out family. Even though it is supposed to be about Mothers, it is really a celebration of family. That is what being a Mother is all about.

Strawberry French Toast Roll Up Casserole

Ingredients

  • 2 large eggs
  • ¾ cup of egg substitute or equivalent to 3 eggs
  • 1 ½ cups coconut creamer or soy creamer
  • 2 tsp. vanilla extract, divided
  • 16 Slices whole wheat sandwich bread or whole grain bread
  • 4 oz. reduced fat whipped cream cheese, softened
  • 1 cup 2% fat plain Greek yogurt
  • 1 tbsp. sugar
  • 1 cup finely chopped strawberries
  • 1 1/2 tbsp. light butter, melted
  • ¼ cup brown sugar
  • 2 tsp. ground cinnamon

Instructions

  1. Preheat oven to 350°.
  2. Spray a 13 x 9 inch baking dish with cooking spray.
  3. In a medium bowl, whisk together eggs, egg substitute, creamer and 1 tsp. vanilla extract.
  4. Pour into the baking dish.
  5. With a rolling pin, flatten slices of bread.
  6. In a medium bowl, cream together cream cheese , Greek yogurt and sugar.
  7. Fold in strawberries and 1 tsp. vanilla extract.
  8. Spoon strawberry mixture into a plastic bag and cut off a half inch triangle from one end.
  9. Place about 2 tbsp. of the strawberry mixture in the middle of each bread slice.
  10. Roll up the bread slices and place seam down into the baking dish.
  11. Brush tops of roll-ups with butter.
  12. In a small bowl, mix together sugar and cinnamon
  13. Sprinkle cinnamon sugar on top. Cover with foil
  14. Bake for 25 minutes. Take foil off and cook for an additional 10 minutes.

      Hi Doris, You can substitute 2% milk or fat free half and half. Fat free milk will work but I think the dish will be lacking a little richness and texture.

    What are coconut and soy creamer? Do you mean a flavored coffee cream?

      Hi Jennifer, No, these are non-dairy alternatives to cream made out of cow's milk. Silk has a soy creamer and So Delicious has a coconut creamer. Both are lower in calories and fat than regular cream.

  6. This sounds so delightful! I've long loved cream cheese stuffed french toast and this looks a million times easier to pull together. I also really love your family tradition of making little sandwiches. My mom usually wants to go out to a brunch and it's never as good as you expect or what you could do at home.

      Hi Kelly, I really enjoyed making these. I thought rolling them might try my patience but it was simple and came together so easily. Funnily enough, there are times I wish we would go out. I always seem to do a lot of the work for my own dinner :)
