It’s Recipe Redux time. That is the monthly, healthy recipe competition I participate in. Each month we are given a surprise theme, and this month the theme was bars and bites perfect for a brown bagged lunch. As luck would have it, I had two bar recipes that I had recently made. I love when that happens. Especially since I still feel like I am running around like a chicken with my head cut off trying to catch up on work, now that my little one is back at school.

Working from home and trying to take care of a child during the summer is a hard mix. I know technically I am supposed to create a recipe when I know the secret theme but I cheated a little and used one I had recently developed. That little help and another check off the to-do list is helping to keep me sane and a tad less stressed.

These little sweet treats would be a wonderful surprise in anyone’s lunch box. I almost wish I had a lunch box just so I could find one in mine. These epitomize what I love in a dessert, fresh fruit, cream cheese and a crunchy topping.    Oh and there is crust.  How I adore crust.  I’ve managed to put in some healthy ingredients too, oatmeal, Greek yogurt, wheat flour and those oh so fresh and sweet strawberries.

With the addition of those healthy ingredients, I’m happy to put in a little slice of these in my daughter’s lunch. I also used a little less sugar.  Whoo hoo!  That is one thing I am really proud of.  I’ve been cutting the sugar in everything and now realize we like everything a little less sweet.  Last week, I took a bite of a cake at a restaurant and thought “Whoa!  Too sweet.”  Yipee.  One healthy diet change really made.  Now I need to conquer my desire for salty.

Strawberry Cream Cheese Oatmeal Bars

Ingredients

  • 1 cup whole wheat pastry flour 120 grams
  • 1 ¾ cups regular oats
  • ½ cup packed light brown sugar
  • 1 tsp baking powder
  • Pinch of kosher salt
  • 5 tbsp cold unsalted butter cut into pieces
  • 2 tbsp cold 0% fat Greek yogurt
  • 1 egg white
  • 3 cups strawberries hulled and quartered
  • ¼ cup granulated sugar
  • 1 tbsp cornstarch
  • 8 oz reduced fat cream cheese softened
  • 3 tbsp confectioners’ sugar
  • ¼ tsp ground cinnamon
  • ¼ tsp almond extract

Instructions

  1. Preheat oven to 375°.
  2. Spray a 9 x 13 inch baking dish with cooking spray. Line with parchment paper, leaving an overhang on two sides
  3. In a food processor, pulse flour, oats, brown sugar, baking powder and salt 3 times.
  4. Add butter, yogurt and egg white and pulse until butter is pea sized.
  5. Reserve 1 cup of the oat mixture.
  6. Press remaining oat mixture into bottom of pan.
  7. Bake for 5 minutes.
  8. In a medium bowl, mix together strawberries, sugar and cornstarch.
  9. In another medium bowl, mix together cream cheese, confectioners’ sugar, cinnamon and almond extract.
  10. Spread strawberries on top of the crust.
  11. Dollop cream cheese mixture over strawberries.
  12. Sprinkle reserved oat mixture on top.
  13. Bake for 30 minutes, or until golden brown.
  14. Cool in pan for 10 minutes.
  15. Remove from pan and cool completely before cutting.

  1. I love this recipe and have printed it off to make soon. As for putting in a lunch box, unless you pack a cold pack in there, be careful. The cream cheese is perishable and could make a child sick if not refrigerated.

      Good point Donna. I always put an cold pack in my child's lunch no matter what. Those classrooms and the bus ride gets very hot.

  4. Oooo....I'd love to pack my own lunch just so I could eat one of your yummy bars too! I know what you mean about the challenge of kids at home during the summer. My own kids go back to school next week, and as much as I love them, I am counting down the days :-) I'm definitely going to make a gluten-free version of these bars soon!

      Thanks EA. I am glad school is back in. I forgot how much I love hearing about her day when she gets home. I think she is a little happier too. Gluten free version sounds wonderful. I keep meaning to learn more about gluten free cooking but have yet to give it a whirl.
