Yipee! Spring is almost here and the wonders of Spring vegetables are already starting to hit the grocery store. It’s time for asparagus, artichokes, swiss chard, green beans, baby bok choy, spinach, sugar snap peas and so much more. These recipes all celebrate the bounty of vegetables Spring brings.
Normally you see lettuce in spring rolls. I love that these have swiss chard in them. What a unique use of chard.
These egg rolls are baked not fried. Plus they are filled with Spring greens.

This dish celebrates the Vidalia onion. Since I happen to live in Georgia, I had to include a recipe that includes this glorious Spring vegetable.
While I like bok choy, I love baby bok choy. It is so incredibly versatile. You can grill it, stir fry, or eat it raw.
