Have I mentioned lately what a problem lunch is for me? I know I have. I made a huge step forward yesterday, yippee! We were at my husband’s work picnic where they were serving BBQ. It sure did smell good, but I decided today was the day. I was going to take a stand and eat healthy for lunch. So I went home, absolutely famished; the kind of hungry that you want to eat something immediately. Part of my brain was saying just eat something now. The other rational part was saying “Whip up a Spinach and Feta Wrap”. The other side of my brain piped in that it would take too long and I needed to eat now. Luckily the rational side won out (one small victory), and I had lunch in under 10 minutes. My family came home and wanted to know what smelled so good. Ha! It was my healthy lunch of a Spinach and Feta Wrap. It did smell amazing. Who doesn’t love the smell of pesto? The pesto flavor mingled with the eggs and feta for a fantastic and satisfying lunch.
Afterwards, I tried to sear into my brain how easy this lunch was to make, how much I enjoyed it and how many different variations I could make. It would feel like going out to lunch everyday. Plus the clean up is minimal too. You all know I am a big stress eater and have been trying to defeat that demon for a long time. We just had my daughter’s coming of age ceremony (think a mini wedding) that I had to plan, plus a houseful of family staying for 10 days. The eating situation was not good. I am not giving up, ever! So today I set up a new walking schedule with a neighbor to walk the days I am not at the gym. I love having an exercise buddy. I also am giddy about this recipe and plan on having it again today for lunch. Tomorrow I am going to add a little taco sauce and make a Mexican version.
