Valentine’s Day is fast approaching. Did you think to yourself who cares, or are you a great lover of Valentine’s Day? It does not matter which camp you fall into, Spaghetti with Smoked Salmon, Fried Capers and Vodka Cream Sauce (wow that is a long title) is going to be delish. It works perfectly for a romantic evening in or would be absolutely fantastic for a dinner party. It is simple to make, oh so simple. It is also incredibly quick to make. Winner, winner pasta dinner. (Hmm, Do I use that phrase too much?)
I feel like I should be quoting great romantic literature and setting the proper mood for a romantic Valentine’s dinner so you cannot wait to make this recipe. All the romantic clichés totally turn me off though. I don’t want a candlelit dinner with Barry White playing in the background. I certainly do not want to go out to an overly crowded restaurant and pay double for a meal. Here I go again, talking you out of a romantic dinner. What am I doing?
I give up. Let’s forget about Valentine’s Day and talk about food. Yeah! Have you ever tried making your own smoked salmon? You will not believe how easy it is. You can find the recipe for Homemade Smoked Salmon here. By all means, use store-bought, if you do not want to make your own. You do not need a lot. Smoked Salmon is in “your face flavor” so you only need a little. Oh, we cannot forget about the fried capers. Is there any other greater joy than fried capers? No way. I love the little salty orbs of deliciousness that get crunchy when fried. When you bite into one, flavor explodes in your mouth.
Then there is the vodka cream sauce. Yes, vodka and cream in a low calorie dish. I am so excited, are you? Is your tummy growling just thinking about eating this luxurious pasta dish? All the flavors unite in perfect harmony. The saltiness of the smoked salmon and fried capers is matched by the zing of vodka and the creaminess of the half and half. Oh we should not forget the pasta. Ours was homemade but a box of spaghetti works just as well. With all the carbohydrate haters out there, I feel like pasta has become a bad word. Not in our world, pasta works for us.
