Summer is rolling on so quickly. My little one is starting 2nd grade in only a few weeks! They go back incredibly early here in Georgia. I have to remind myself that even though summer vacation is over, summer fruits and vegetables (and the oh so hot weather) are not over. Good thing too because this Sour Cream Dill Cucumber Salad is perfect to serve with a barbecue. It is so refreshing and light. Since cucumbers are one of my daughter’s favorite vegetables it also leads to a totally non-stressful dinner. She will gladly gobble up this salad or raw cucumbers. Plus cucumbers are incredibly low in calories, I mean really low. Yeah!
Before summer vacation is over, we are trying to complete our Summer to-do list. I’m not sure we will make it. It was a really long list. Plus my parents will be taking my daughter on vacation to visit her great-grandparents for about 10 days. That will be like a staycation for me. I’m planning on getting a lot of work done and getting back into my exercise routine. I’ve planned a few date nights with my hubby and hopefully one day just to do nothing or whatever I want to do. I have to admit I am looking forward to it although I will miss her like crazy.
When she comes back, we will hit our summer list hard. We’ve still got to make ice cream, go to the Aquarium, have a craft day plus school shopping. She really wants to go to the Zoo too. If we have easy salads for dinner, that will give us more time to have fun. We’ve already made popsicles, gone to the pool, the library, taken a vacation, made a scrapbook, played miniature golf, took the money from her piggy bank and put it in the bank. Oh I forgot bowling, we still have to go bowling, make slushies and have a sleep over. So much for the lazy days of summer. It always feels more busy. I’ve got to squeeze work into the mix too. Ok, no more complaining. I can hardly complain about life right now. Everyone is happy and healthy, that is a blessing in itself.
I will enjoy all the fabulous summer fruit and vegtables for the next few months especially since we got a new Farmer’s Market, Sprouts. It just opened and I am tickled pink. They have had fabulous prices on seasonal produce and a lot more variety including organic produce. Oh man, the tomatoes are so delicious. We’ve been eating our share of zucchini and cucumber too. Also corn. Wow! We had the best corn the other day. Oh watermelon too! I pureed the watermelon and made margaritas. That has become a summer tradition. All of these will go so well with Sour Cream Dill Cucumber Salad. In the summer I really could live off a big plate of veggies.

Sour Cream Dill Cucumber Salad
- 1 ½ English cucumbers thinly sliced
- 1 ½ tsp kosher salt divided
- 2 tbsp rice wine vinegar
- 2 tbsp light sour cream
- 2 tbsp 2% fat Greek yogurt
- 1 tbsp chopped fresh dill
- ¼ tsp fresh ground black pepper
Place cucumbers in a colander and toss with 1 tsp. salt. Let sit for 10 minutes. Rinse well and drain again.
Lay cucumber out on paper towels to dry.
In a medium bowl, mix together remaining ingredients. Stir in cucumber.
