Throw dinner into the slow cooker and come home to a healthy, easy dinner. Slow Cooker Lasagna Soup has all the elements of a lasagna; noodles, turkey sausage, cheese and, of course, lots of vegetables making it a healthy soup.
It’s slow cooker Tuesday in our house and on Food Done Light. Almost every Tuesday, I throw dinner into the slow cooker. My little one has horse riding lessons, and it is very hard to have dinner on the table quickly. So I love that I can throw something in the slow cooker and we can come home to the wonderful smells of a healthy dinner.
A lot of times I will let my little one choose what we are having for dinner, but she tends to pick one of two things. So I am working on expanding her choices. Slow Cooker Lasagna soup, a healthy soup recipe was a huge success with all of us. Patience is not a virtue I possess, so making an actual lasagna does not happen very often. There are too many steps. I have to make the sauce, make the cheese mixture, layer it all and cook forever. No, it is not going to happen very often.
Slow Cooker Lasagna Soup on the other hand is something I will gladly throw together. It is kind of like a deconstructed lasagna, but in the form of a healthy soup. No layering, hallelujah! Also no need to cook the noodles before hand, no sauce to make. Just throw everything in the slow cooker and let the slow cooker do it’s magic. Right before dinner, I mix up the cheese mixture to dollop on top, dollop, not try to spread it all over; just a two second dollop. Dinner is served, one healthy soup on the table. Oh yes, it is that easy. Woo hoo!
For some reason, I have stockpiled pasta. I’m not sure why. We actually don’t eat pasta very often; but I think I bought it every time it was on sale. It’s on sale a lot. So I am slowly trying to work our way through it all. If there is ever a pasta shortage, we are set. I could feed the neighborhood. Oh, I forgot about the pasta I have in the freezer too. So I could feed our town with all our pasta.
I mentioned the need for Slow Cooker Tuesday came about because of my little one’s horse riding lessons. She started taking lessons when she was 3 years old. This child begged and begged for months before we finally allowed her to take lessons. I mean really, a 3-year-old is not strong enough or big enough to really learn to ride a horse. She loved it though. Now 4 years later, she still loves it and begs for a horse. No, that is not happening!
I am so glad we indulged her with the lessons at 3 years old. Little “L” is shy and caution child except around a horse. She has no fear and commands the horse. I love what it has done for her self-confidence. We are at the point where we need to find a larger facility so she can take dressage lessons. Dressage is where the horse looks like he is dancing. That is what she has decided she wants to do.
My husband and I know zip about horses, other than they are beautiful. We have a steep learning curve to conquer, if Little “L” is going to continue on this path. Eventually, her own horse is going to have to come into the picture. I would consider us “city folk” so this will be quite an adventure. You never know what direction life is going to take you in. Of course, since she is only 7 years old, she could change her mind at any moment and want to do something else. My gut tells me this is her “thing” but I’m happy to see where life will take her. I love being along for the ride of her life.

Healthy Soup - Slow Cooker Lasagna Soup
- 1 tsp oil
- 1 cup finely chopped onion
- 1 cup finely chopped carrot
- 1 cup finely chopped celery
- 1 lb turkey or chicken Italian sausage removed from casing
- 8 oz sliced mushrooms
- 2 cloves garlic minced
- 1 oz can crushed tomatoes 28 .
- 4 cups low-sodium chicken or vegetable broth
- 2 tbsp tomato paste
- 8 oz whole wheat or multi-grain lasagna noodles broken into 2 inch pieces
- 2 tsp dried basil
- 2 tsp dried oregano
- 1 tsp kosher salt
- ¼ tsp fresh ground black pepper
- 3 tbsp low fat ricotta cheese
- 3 tbsp low fat cottage cheese
- 1 tbsp grated Parmesan cheese
- 1 tbsp chopped fresh parsley
Heat oil in a large non-stick skillet. Add onion, carrots and celery and cook until translucent.
Add sausage and cook until crumbly and done. Add mushrooms and garlic. Cook for 5 minutes.
Pour sausage mixture into the slow cooker.
Stir in the next 8 ingredients (through pepper).
Cook on low for 7 hours.
In a small food processor, puree remaining ingredients.
Serve soup in bowls with a dollop of the ricotta mixture.
