I know the holidays are in full swing, but that is the perfect time to think about eating healthy. Let’s face it; you are probably running on empty right now. Work, family, holiday preparations, Christmas shopping and so much more. It is also flu and cold season. You need quick, easy and above all healthy food to keep your body going. Soup also happens to be one of my favorite diet tips. When you are craving a certain type of food, make it into a soup. Soup is usually lower calorie and fat.
In this case, I was craving sausage and pepper sandwiches. The roll alone can have 300 to 500 calories. So I made it into a soup instead. I can have a big bowl of soup filled with Honeysuckle White Turkey Sausage, peppers and little potatoes. You might wonder where the potatoes came from. One of the best sausage sandwiches I ever had included sliced potatoes cooked with the onions and peppers. So they went in my soup. I got all the flavor of a sausage and pepper sandwich, but it is in a healthier, less calorie soup.
I also threw all the ingredients into a slow cooker. I didn’t brown anything first. Simply dump the ingredients in your slow cooker, put on low for 4 hours and come back to a delicious bowl of soup for dinner. If you follow Food Done Light, you know I love to use turkey instead of chicken. Did you see my recipe for Turkey Parmesan? You won’t want chicken again. If you are on Weight Watchers, you know turkey breast has fewer points than chicken.
Some tips about keeping your soup healthy and low calorie. Make broth based soups. I don’t use cream in my soups. Instead I use homemade stock or low-sodium store-bought broth. Load up on the vegetables. I love to put a lot of vegetables in my recipes. Why would you not? Vegetables are extremely low in calories. Plus they are filled with vitamins and nutrients that your body needs.
Since I am not browning any of the ingredients, I did not add additional fat to the recipe. Don’t get me wrong, you need to have fat in your diet to keep your brain functioning, but remember that 1 tablespoon of oil has 120 calories and 12 g fat. It isn’t needed here. I would rather enjoy more turkey Sausage then add oil. It will make me fuller. Add more spices and fresh herbs. They will amp up the flavor without added calories. So you can enjoy a big bowl of Slow Cooker Sausage & Pepper Soup and beat back the 10 lb weight gain from the holiday season.

Slow Cooker Sausage & Pepper Soup
Slow Cooker Sausage, Peppers & Potato Soup
- 20 oz. Honeysuckle White Sweet Italian Turkey Sausage cut into ¾ inch pieces
- 2 red peppers sliced
- 1 green pepper sliced
- 1 yellow pepper sliced
- 1 small yellow onion sliced
- 1 ½ lbs. tiny mixed potatoes
- 3 cloves garlic minced
- 2 cups low-sodium chicken broth
- 26.4 oz can diced tomatoes
- 2 tsp. dried basil
- 2 tsp. dried oregano
- 1 tsp. kosher salt
- ¼ tsp. fresh ground black pepper
Place all ingredients into a slow cooker.
Cook on low for 4 hours.
I calculated 9 Weight Watcher smart points.
Serving size is about 1 1/2 cups.
